Chicken (food)

Chicken is the most common type of poultry in the world.

In developed countries, chickens are usually subject to intensive farming methods.

History

The modern chicken is a descendant of red junglefowl hybrids along with the grey junglefowl first raised thousands of years ago in the northern parts of the Indian subcontinent.

Chicken as a meat has been depicted in Babylonian carvings from around 600 BC. Chicken was one of the most common meats available in the Middle Ages. It was eaten over most of the Eastern hemisphere and a number of different kinds of chicken such as capons, pullets and hens were eaten. It was one of the basic ingredients in the so-called white dish, a stew usually consisting of chicken and fried onions cooked in milk and seasoned with spices and sugar.

Chicken consumption in the United States increased during World War II due to a shortage of beef and pork. In Europe, consumption of chicken overtook that of beef and veal in 1996, linked to consumer awareness of Bovine spongiform encephalopathy (mad cow disease).

Chicken

The chicken (Gallus gallus domesticus) is a domesticated fowl, a subspecies of the red junglefowl. As one of the most common and widespread domestic animals, with a population of more than 19 billion in 2011, there are more chickens in the world than any other species of bird or domestic animal. Humans keep chickens primarily as a source of food, consuming both their meat and their eggs.

Genetic studies have pointed to multiple maternal origins in Southeast-, East-, and South Asia, but with the clade found in the Americas, Europe, the Middle East and Africa originating in the Indian subcontinent. From India, the domesticated chicken was imported to Lydia in western Asia Minor, and to Greece by the fifth century BC. Fowl had been known in Egypt since the mid-15th century BC, with the "bird that gives birth every day" having come to Egypt from the land between Syria and Shinar, Babylonia, according to the annals of Thutmose III.

Terminology

In the UK and Ireland adult male chickens over the age of one year are primarily known as cocks, whereas in America, Australia and Canada they are more commonly called roosters. Males less than a year old are cockerels.Castrated roosters are called capons (surgical and chemical castration are now illegal in some parts of the world). Females over a year old are known as hens and younger females as pullets although in the egg-laying industry, a pullet becomes a hen when she begins to lay eggs at 16 to 20 weeks of age. In Australia and New Zealand (also sometimes in Britain), there is a generic term chook /ˈtʃʊk/ to describe all ages and both sexes. The young are called chicks and the meat is called chicken.

Food

Food is any substance consumed to provide nutritional support for the body. It is usually of plant or animal origin, and contains essential nutrients, such as fats, proteins, vitamins, or minerals. The substance is ingested by an organism and assimilated by the organism's cells to provide energy, maintain life, or stimulate growth.

Historically, people secured food through two methods: hunting and gathering and agriculture. Today, the majority of the food energy required by the ever increasing population of the world is supplied by the food industry.

Food safety and food security are monitored by agencies like the International Association for Food Protection, World Resources Institute, World Food Programme, Food and Agriculture Organization, and International Food Information Council. They address issues such as sustainability, biological diversity, climate change, nutritional economics, population growth, water supply, and access to food.

The right to food is a human right derived from the International Covenant on Economic, Social and Cultural Rights (ICESCR), recognizing the "right to an adequate standard of living, including adequate food," as well as the "fundamental right to be free from hunger."

Street food

Street food is ready-to-eat food or drink sold by a hawker, or vendor, in a street or other public place, such as at a market or fair. It is often sold from a portable food booth,food cart, or food truck and meant for immediate consumption. Some street foods are regional, but many have spread beyond their region of origin. Most street foods are classed as both finger food and fast food, and are cheaper on average than restaurant meals. According to a 2007 study from the Food and Agriculture Organization, 2.5 billion people eat street food every day.

Today, people may purchase street food for a number of reasons, such as to get flavorful food for a reasonable price in a sociable setting, to experience ethnic cuisines, or for nostalgia.

History

Small fried fish were a street food in ancient Greece, however, Theophrastus held the custom of street food in low regard. Evidence of a large number of street food vendors were discovered during the excavation of Pompeii. Street food was widely consumed by poor urban residents of ancient Rome whose tenement homes did not have ovens or hearths. Here, chickpea soup with bread and grain paste were common meals. In ancient China, street food generally catered to the poor, however, wealthy residents would send servants to buy street food and bring it back for them to eat in their homes.

Food processing

Food processing is the transformation of raw ingredients, by physical or chemical means into food, or of food into other forms. Food processing combines raw food ingredients to produce marketable food products that can be easily prepared and served by the consumer. Food processing typically involves activities such as mincing and macerating, liquefaction, emulsification, and cooking (such as boiling, broiling, frying, or grilling); pickling, pasteurization, and many other kinds of preservation; and canning or other packaging. (Primary-processing such as dicing or slicing, freezing or drying when leading to secondary products are also included.)

History

Food processing dates back to the prehistoric ages when crude processing incorporated fermenting, sun drying, preserving with salt, and various types of cooking (such as roasting, smoking, steaming, and oven baking), Such basic food processing involved chemical enzymatic changes to the basic structure of food in its natural form, as well served to build a barrier against surface microbial activity that caused rapid decay. Salt-preservation was especially common for foods that constituted warrior and sailors' diets until the introduction of canning methods. Evidence for the existence of these methods can be found in the writings of the ancient Greek, Chaldean, Egyptian and Roman civilizations as well as archaeological evidence from Europe, North and South America and Asia. These tried and tested processing techniques remained essentially the same until the advent of the industrial revolution. Examples of ready-meals also date back to before the preindustrial revolution, and include dishes such as Cornish pasty and Haggis. Both during ancient times and today in modern society these are considered processed foods.
