Ingredients: 1/2 Kg leftover Lechon, 1 Cup leftover Lechon Sauce or 1 small bottle of Sarsa ni Mang Tomas, 1/2 Cup Sugarcane Vinegar, 1/2 Tsp Crushed Peppercorn, 3 Bay Leaves (Dahon ng Laurel), 1 Medium Size Onion (chopped), 3 Cloves Garlic (Crushed), 1 Tbsp Brown Sugar, 2 Tbsp Olive Oil, 1/2 Cup Water and Salt to taste. Servings: Good for 3

How to cook Lechon Paksiw Ingredients: 1/2 kl lechon leftover 1/2 bottle Mang Tomas all around sarsa 1 large onion, sliced 4 cloves garlic, crushed 1/2 tsp sugar(optional) 1/4 cup soy sauce 1/3 cup vinegar salt and pepper to taste 1 cup water Procedure: 1) In a deep pot add leftover lechon, onion, garlic, add soy sauce, vinegar, water, salt and pepper. 2)Mix it and bring to a boil 3)When it boils add the sugar and Mang Tomas all around Sarsa 4)Cook until the sauce is thick(cook for 5 monites in med high heat) 5)Best served with rice Paksiw is a term used when the dish is cooked with vinegar. Here in the Philippines we love to eat Lechon or roasted pig. When we have leftover lechon sometimes we fry it but the famous dish is Lechon Paksiw.
