A material is brittle if, when subjected to stress, it breaks without significant deformation (strain). Brittle materials absorb relatively little energy prior to fracture, even those of high strength. Breaking is often accompanied by a snapping sound. Brittle materials include most ceramics and glasses (which do not deform plastically) and some polymers, such as PMMA and polystyrene. Many steels become brittle at low temperatures (see ductile-brittle transition temperature), depending on their composition and processing.
When used in materials science, it is generally applied to materials that fail when there is little or no evidence of plastic deformation before failure. One proof is to match the broken halves, which should fit exactly since no plastic deformation has occurred.
When a material has reached the limit of its strength, it usually has the option of either deformation or fracture. A naturally malleable metal can be made stronger by impeding the mechanisms of plastic deformation (reducing grain size, precipitation hardening, work hardening, etc.), but if this is taken to an extreme, fracture becomes the more likely outcome, and the material can become brittle. Improving material toughness is therefore a balancing act.
Peanut, also known as groundnut (Arachis hypogaea), is a crop of global importance. It is widely grown in the tropics and subtropics, being important to both smallholder and large commercial producers. It is classified as both a grain legume, and, because of its high oil content, an oil crop. World annual production is about 46 million tonnes per year. Very unusual among crop plants, peanut pods develop under the ground.
As a legume, peanut belongs to the botanical family Fabaceae (also known as Leguminosae, and commonly known as the bean or pea family). Like most other legumes, peanuts harbor symbiotic nitrogen-fixing bacteria in root nodules. This capacity to fix nitrogen means peanuts require less nitrogen-containing fertilizer and improve soil fertility, making them valuable in crop rotations.
Peanuts are similar in taste and nutritional profile to tree nuts such as walnuts and almonds, and are often served in similar ways in Western cuisines. The botanical definition of a "nut" is a fruit whose ovary wall becomes very hard at maturity. Using this criterion, the peanut is not a nut, but rather a legume. However, for culinary purposes and in common English language usage, peanuts are usually referred to as nuts.
Brittle is a type of confection consisting of flat broken pieces of hard sugar candy embedded with nuts such as pecans, almonds, or peanuts. It has many variations around the world, such as pasteli in Greece,croquant in France,gozinaki in Georgia, chikki in India and kotkoti in Bangladesh. In parts of the Middle East, brittle is made with pistachios, while many Asian countries use sesame seeds and peanuts. Peanut brittle is the most popular brittle recipe in the US. The term brittle first appears in print in 1892, though the candy itself has been around for much longer.
Traditionally, a mixture of sugar and water is heated to the hard crack stage corresponding to a temperature of approximately 300 °F (149 °C), although some recipes also call for ingredients such as corn syrup and salt in the first step. Nuts are mixed with the caramelized sugar. At this point spices, leavening agents, and often peanut butter or butter are added. The hot candy is poured out onto a flat surface for cooling, traditionally a granite or marble slab. The hot candy may be troweled to uniform thickness. When the brittle cools, it is broken into pieces.
Comfort food is food which provides a nostalgic or sentimental feeling to the consumer, and is often characterized by a high carbohydrate level and simple preparation. The nostalgia may be specific to either the individual or a specific culture.
The term comfort food has been traced back at least to 1966, when the Palm Beach Post used it in a story: "Adults, when under severe emotional stress, turn to what could be called ‘comfort food’—food associated with the security of childhood, like mother’s poached egg or famous chicken soup."
Comfort foods may be consumed to positively pique emotions, to relieve negative psychological effects or to increase positive feelings.
One study divided college-students' comfort-food identifications into four categories (nostalgic foods, indulgence foods, convenience foods, and physical comfort foods) with a special emphasis on the deliberate selection of particular foods to modify mood or effect, and indications that the medical-therapeutic use of particular foods may ultimately be a matter of mood-alteration.
Alton Crawford Brown (born July 30, 1962) is an American television personality, food show presenter, author, actor, and cinematographer. He is the creator and host of the Food Network television show Good Eats (14 seasons), host of the mini-series Feasting on Asphalt and Feasting on Waves, and host and main commentator on Iron Chef America, Cutthroat Kitchen and Camp Cutthroat. Brown is also the author of several books on food and cooking.
Brown was born July 30, 1962 in Los Angeles, California and spent his youth in Georgia. Brown's father, Alton Brown, Sr., was a media executive in Cleveland, Georgia, owner of radio station WRWH and publisher of the newspaper White County News.
In the late 1980s and early 1990s, Brown was the cinematographer for several music videos, including "The One I Love" by R.E.M..
Brown notes that he was dissatisfied with the quality of cooking shows airing on American television, so he set out to produce his own show. In preparation, he enrolled in the New England Culinary Institute, graduating in 1997. Brown says that he was a poor science student in high school and college, but he focused on the subject to understand the underlying processes of cooking. He is outspoken in his shows about his dislike of single-purpose kitchen utensils and equipment ("unitaskers"), such as garlic presses and margarita machines, although he adapts a few traditionally single-purpose devices, such as rice cookers and melon ballers, into multi-purpose tools.

Betty demonstrates how to make Party Peanut Brittle. Everyone loves peanut brittle, and it is a perfect pick-up food at a party. Party Peanut Brittle 1 cup sugar 1/2 cup light corn syrup pinch of salt 1 cup dry-roasted peanuts 2 tablespoons butter 1 teaspoon baking soda 2 teaspoons vanilla extract cooking oil spray In a medium-sized heavy pot, stir together 1 cup sugar, ½ cup light corn syrup, and a pinch of salt.
