Processed meat is considered any meat which has been modified in order either to improve its taste or extend its shelf life. Methods of meat processing are "salting, curing, fermentation, smoking or other processes" according to IARC. Processed meat is usually composed of pork or beef, but also poultry, while it can also contain offal or meat by-products such as blood. Processed meat products include bacon, ham, hotdogs, sausages, salami, corned beef, beef jerky, canned meat and meat-based sauces. IARC at the World Health Organization classifies processed meat as a Group 1, carcinogenic to humans, since it has found sufficient evidence that consumption of processed meat by humans causes colorectal cancer. Meat processing includes all the processes which are changing fresh meat with the exception of simple mechanical processing such as cutting, grinding or mixing.
Meat processing have begun as soon as people realized that cooking and salting prolongs the life of fresh meat. It is not known when this took place, however, the process of salting and sun-drying was recorded in Ancient Egypt, while using ice and snow is credited to early Romans, while canning was developed by Nicolas Appert who received in 1810 a prize for his invention from the French government.
The World Health Organization (WHO /huː/) is a specialized agency of the United Nations (UN) that is concerned with international public health. It was established on 7 April 1948, headquartered in Geneva, Switzerland. The WHO is a member of the United Nations Development Group. Its predecessor, the Health Organization, was an agency of the League of Nations.
The constitution of the World Health Organization had been signed by 61 countries on 22 July 1946, with the first meeting of the World Health Assembly finishing on 24 July 1948. It incorporated the Office International d'Hygiène Publique and the League of Nations Health Organization. Since its creation, it has played a leading role in the eradication of smallpox. Its current priorities include communicable diseases, in particular HIV/AIDS, Ebola, malaria and tuberculosis; the mitigation of the effects of non-communicable diseases; sexual and reproductive health, development, and aging; nutrition, food security and healthy eating; occupational health; substance abuse; and driving the development of reporting, publications, and networking.
Meat is animal flesh that is eaten as food. Humans are omnivorous, and have hunted and killed animals for meat since prehistoric times. The advent of civilization allowed the domestication of animals such as chickens, sheep, pigs and cattle, and eventually their use in meat production on an industrial scale.
Meat is mainly composed of water, protein, and fat, and is usually eaten together with other food. It is edible raw, but is normally eaten after it has been cooked and seasoned or processed in a variety of ways. Unprocessed meat will spoil or rot within hours or days as a result of infection with and decomposition by bacteria and fungi.
Most often, meat refers to skeletal muscle and associated fat and other tissues, but it may also describe other edible tissues such as offal.Meat is sometimes also used in a more restrictive sense – the flesh of mammalian species (pigs, cattle, lambs, etc.) raised and prepared for human consumption, to the exclusion of fish, other seafood, poultry or other animals.

Included in the discussion was the World Health Organization’s classification of processed meat as a “Group 1” carcinogen; the latest on what is known about fats and cancer; and the just-released Dietary Guidelines for Americans as they pertain to cancer and diet. Additionally, the panel discussed cancer prevention strategies. Part of The Dr. Lawrence H. and Roberta Cohn Forums, this event was presented January 15, 2016 in Collaboration with The Huffington Post and in Association with Harvard Health Publications. Watch the entire series from The Forum at Harvard T.H. Chan School of Public Health at www.ForumHSPH.org.
The World Health Organization announced Monday that cured and processed meats like bacon, sausage, hot dogs and ham cause cancer, adding the foods to a top-tier list of carcinogenic substances that includes alcohol, cigarettes, asbestos, and arsenic. The average American consumes about 18 pounds of bacon each year.
Nearly a quarter of the meat products Americans consume are processed meat. However, the World Health Organization recently declared processed meats “carcinogenic to humans.” The organization has classified processed meats in the same category as asbestos, tobacco products, and other carcinogens. Learn about the relationship between processed meat and cancer, how to replace processed meat in menu planning, and strategies to market new options on the menu.

Processed Food Documentary: Processed Food vs. Nutritional Needs. The human body runs on food. Once, food shortage was the major concern. After the second world war, technological advances in food production led to a new era, that was characterized by an overabundance of inexpensive food, and relatively little physical activity. In the decades that followed, other sociocultural shifts continued to contribute to the changing way we ate. Women who had previously controlled most of the average family's food preparation now entered the workforce in significant numbers. And the processed food industry began to capitalize on our need for fast, convenient food. This meant that fewer meals were being cooked at home. And since convenience foods were generally higher in calories than home-...

The energy to grow their food, to feed them, to transport them, to slaughter and finally to your local grocer in the form of packaged flesh OR prepared / frozen meals and various by-products. Negative health issues aside, this practice most certainly contributes to wide scale pollution and contamination of our air, water and land. The c...

This something Dr. Wallach has been stating for literally decades. Contending the nitrates and nitrites used as preservatives cause inflammation and damage to cells. Pearls of Wisdom Doug Winfrey and Dr. Wallach discuss a news article about study of antibiotic use. It's long been known that the over prescribing of antibiotics has lead to many health challenges including superbugs that kill thousands. Now a new side effect has come to light and that is weight gain. Researchers at the Johns Hopkins Bloomberg School of Public Health analyzed health records of some 160,000 children ages 3 to 18. This educational video shows pork and meat products made in a United States factory sometime in the 1950's. A feature of the U.S. pig and hog industry has been the rapid shift to fewer and larger operations, associated with the advent of electricity, and technological change created an ever evolving industry structure. The United States is the world's third-largest producer and consumer of pork and pork products. The US is also the world's largest producer exporter of pork and pork products, with exports averaging over 20 percent of commercial pork production in most years. U.S. hog operations today tend to be heavily concentrated in the Midwest and in eastern North Carolina. Ham and bacon are popular foods in the west, and their consumption has increased with industrialization where in As...
