Pastel de nata (Portuguese pronunciation: [pɐʃˈtɛɫ dɨ ˈnatɐ]; plural: pastéis de nata), is a Portuguese egg tart pastry, common in Portugal, the Lusosphere countries and regions (which include Brazil, Angola, Mozambique, Cape Verde, São Tomé and Príncipe, Guinea-Bissau, Timor-Leste, Goa, Malacca and Macau, introducing them later in Mainland China), and countries with significant Portuguese immigrant populations, such as Canada, Australia, Luxembourg, the United States, and France, among others.
Pastéis de nata were created before the 18th century by Catholic monks at the Jerónimos Monastery (Portuguese: Mosteiro dos Jerónimos) in the civil parish of Santa Maria de Belém, in Lisbon. At the time, convents and monasteries used large quantities of egg-whites for starching of clothes, such as nuns' habits. It was quite common for monasteries and convents to use the leftover egg yolks to make cakes and pastries, resulting in the proliferation of sweet pastry recipes throughout the country.

O doce mais típico de Portugal, o Pastel de Nata é um ícone e um orgulho nacional! Esta pequena maravilha aromatizada de limão e canela, tem um recheio cremoso dentro de uma massa crocante e é o preferido de todos os portugueses! PASTÉIS DE NATA (10 a 12 unidades) - 250 gr de leite gordo (leite integral) - 150 gr de açúcar - 75 gr de água - 30 gr de farinha sem fermento - 4 gemas - 1 ou 2 paus de canela - 3 ou 4 tiras de casca de limão (limão siciliano) - cerca de 300 gr de massa folhada* Para a calda de açúcar: Num tacho levar ao lume o açúcar e a água, mexendo antes para dissolver o açúcar e não voltando a mexer enquanto está ao lume. Ingredientes para a massa 2 xícaras de chá farinha de trigo 8 colheres de sopa de margarina 1 xícara de chá de água 1 pitada de sal Ingredientes para o recheio 2 xícaras de chá de leite 1 xícara de chá de açúcar 1 colher de sopa de farinha de trigo 6 gemas Modo de preparo da massa: misturar a farinha com o sal e a água, amassar bem e deixar descansar.
