Cotta may refer to:
Panna cotta (Italian 'cooked cream') is an Italian dessert of sweetened cream thickened with gelatin and molded. The cream may be aromatized with rum, coffee, vanilla, or other flavorings.
Sugar is dissolved in warm cream. The cream may be flavored, either by infusing spices and the like in it, or by adding rum, coffee, vanilla, and so on. Gelatin is softened in a cold liquid, then added to warm cream mixture. This is poured into molds and allowed to set. The molds may have caramel in the bottoms, giving a result similar to a crème caramel.
Although the name means 'cooked cream', the ingredients are only warmed enough to dissolve the gelatin and sugar.
Panna cotta is often served with a coulis of berries, or a sauce of caramel or chocolate. It may be covered with fruit or with liqueurs.
Panna cotta is not mentioned in Italian cookbooks before the 1960s, yet it is often cited as a traditional dessert of the northern Italian region of Piedmont. One (undocumented) story says that it was invented by a Hungarian woman in the Langhe in the early 1900s.

Christoph Ransmayr (born 20 March 1954) is an Austrian writer.
Born in Wels, Upper Austria Ransmayr grew up in Roitham near Gmunden and the Traunsee. From 1972 to 1978 he studied philosophy and ethnology in Vienna. He worked there as cultural editor for the newspaper Extrablatt from 1978 to 1982, also publishing articles and essays in GEO, TransAtlantik and Merian. After his novel Die letzte Welt was published in 1988 he did extensive traveling in Ireland, Asia, North and South America. In 1994 he moved to West Cork, Ireland, as a friend offered to lease him a splendid house on the Atlantic coast for a very affordable rent. In 1997 Ransmayr read his short story Die dritte Luft oder Eine Bühne am Meer, written for this occasion, as a keynote speech for the Salzburg Festival. After his marriage in the Spring of 2006 Ransmayr returned to live in Vienna.
