Whipped cream

Whipped cream is cream that is whipped by a whisk or mixer until it is light and fluffy. Whipped cream is often sweetened and sometimes flavored with vanilla, and is often called Chantilly cream or crème Chantilly (pronounced: [kʁɛm ʃɑ̃tiji]).

Food chemistry

Cream containing 30% or more butterfat can be mixed with air, and the resulting colloid is roughly double the volume of the original cream as air bubbles are captured into a network of fat droplets. If, however, the whipping is continued, the fat droplets will stick together destroying the colloid and forming butter. Lower-fat cream (or milk) does not whip well, while higher-fat cream produces a more stable foam.

Cream is usually whipped with a whisk, an electric or hand mixer, or a food processor.

Whipped cream is often flavored with sugar, vanilla, coffee, chocolate, orange, and so on. Many 19th-century recipes recommend adding gum tragacanth to stabilize whipped cream; a few include whipped egg whites. Various other substances, including gelatin and diphosphate (E450), are used in commercial stabilizers.

Cream

Cream is a dairy product composed of the higher-butterfat layer skimmed from the top of milk before homogenization. In un-homogenized milk, the fat, which is less dense, will eventually rise to the top. In the industrial production of cream, this process is accelerated by using centrifuges called "separators". In many countries, cream is sold in several grades depending on the total butterfat content. Cream can be dried to a powder for shipment to distant markets. Cream has high levels of saturated fat.

Cream skimmed from milk may be called "sweet cream" to distinguish it from whey cream skimmed from whey, a by-product of cheese-making. Whey cream has a lower fat content and tastes more salty, tangy and "cheesy". In many countries, cream is usually sold partially fermented: sour cream, crème fraîche, and so on.

Cream has many culinary uses in both sweet and salty dishes.

Cream produced by cattle (particularly Jersey cattle) grazing on natural pasture often contains some natural carotenoid pigments derived from the plants they eat; this gives the cream a slight yellow tone, hence the name of the yellowish-white color, cream. This is also the origin of butter's yellow color. Cream from goat's milk, or from cows fed indoors on grain or grain-based pellets, is white.

Tarla Dalal

Tarla Dalal (June 1936 – 6 November 2013) was an Indian food writer, chef, cookbook author and host of cooking shows. Her first cook book, The Pleasures of Vegetarian Cooking, was published in 1974. Since then she wrote over 100 books and sold more than 3 million copies. She also ran the largest Indian food web site, and published a bi-monthly magazine, Cooking & More. Her cooking shows included The Tarla Dalal Show and Cook It Up With Tarla Dalal.

Though she wrote about many cuisines and healthy cooking, she specialized in Indian cuisine, particularly Gujarati cuisine. She was awarded the Padma Shri by Government of India in 2007. She was also awarded Women of the Year by Indian Merchants' Chamber in 2005.

She died on 6 November 2013 following a heart attack.

Early life

She was born and brought up in Pune, India in a Marathi Brahmin family. She married Nalin Dalal in 1960 and moved to Bombay (now Mumbai) after the marriage.

Career

Dalal started conducting cooking classes from her home in 1966, which led to the publication of her first cook book, The Pleasures of Vegetarian Cooking in 1974. The book has sold over 1,500,000 copies. Over time, her popularity grew and she became a household name, with housewives and chefs swearing by her recipes. Tarla Dalal is credited with introducing and popularising foreign cuisines to the masses. She made vegetarian versions of a lot of non-vegetarian recipes from foreign lands. She revolutionised the cooking industry and is the most sold cookbook author in India. Her books have been translated into languages like Hindi, Gujarati, Marathi, Bengali, Dutch and Russian. She also published cooking magazines. In 2007 she started her 'Total Health Series' cookbook series.
