PASTA FREDDA CON VERDURE! I sapori della nostra puglia sulla nostra tavola
INGREDIENTI:
500 gr di farfalle o ciò che vi piace,
zucchina, melanzana e peperone rosso a pezzettini,
pomodorini a pezzettini,
basilico,
carciofi a spicchi ,
sale,
cipolla affettata finemente,
olio d'oliva,
olive verdi e nere snocciolate,
pochi capperi.
PREPARAZIONE:
Innanzitutto cucinare la pasta, scolarla e irrorarla con un pò d'olio d'oliva in modo che non si attacchi una con l'altra. Nel frattempo che si raffredda, mettere un pò d'olio nella pentola antiaderente , la cipolla e soffriggere, aggiungere le zucchine, la melanzana , il peperone tagliati a pezzettini , un goccio d'acqua e il sale. Far cuocere per 7-8 minuti e poi aggiungere i capperi, i carciofi, le olive e cuocere per altri 3-4 minuti e poi spegnere. Versare il composto nella pasta , aggiungere i pomodorini, basilico tritato ed è fatta... I sapori della nostra puglia sulla nostra tavola.. Spero che la mia ricetta vi sia piaciuta! Ingredienti Ricetta
Per 450 g di pasta
350 g di farina bianca di tipo 00
180 ml circa di acqua
8 g di sale
10 ml di aceto o di vino bianco secco
3 cucchiai di olio extravergine d'oliva
Preparazione Pasta Matta o Pasta Morta
1. Setacciare la farina bianca e raccoglierla in una ciotola.
Lo sapevi che…
SETACCIARE LA FARINA è un importante accorgimento per arearla, ovvero per ossigenarla: incorporando l’aria al suo interno, l’impasto risulterà più leggero e soffice perché la maggior quantità di aria intrappolata nella farina permetterà un miglior assorbimento di acqua, di conseguenza il glutine si formerà più agevolmente. Inoltre, questa semplice procedura ci permetterà di ottenere un impasto privo di grumi.
La presenza di ACETO O DI VINO favorisce la riduzione del pH totale: questo accorgimento facilita lo sviluppo del glutine e la pasta si stenderà più facilmente perché sarà più elastica.
La pasta matta prende il nome anche di “PASTA MORTA” per l’assenza di lieviti: questa sfoglia, infatti, non gonfia in cottura!
2. Sciogliere il sale in poca acqua tiepida: l’accorgimento è utile per evitare che la pasta presenti macchie bianche sulla superficie.
3. Al centro della farina, versare l’olio extravergine d’oliva, il vino (o l’aceto), il sale con l’acqua e impastare gli ingredienti aggiungendo a filo l’acqua rimanente.
4. Una volta ottenuta la giusta consistenza, avvolgere la pasta nella pellicola trasparente e lasciar riposare per almeno mezz’ora.
5. Al termine, stendere la pasta con il matterello: si consiglia di stendere la pasta a uno spessore molto sottile, quasi trasparente. La pasta matta o pasta morta è perfetta per realizzare torte salate croccanti oppure strudel dolci.
6. Una volta stesa, la pasta può essere farcita a piacere: per la cottura, si consiglia 180°C (ventilato) per 20-30 minuti, in base al tipo di preparazione.

Pasta
Pasta (Italian pronunciation: [ˈpasta]) is a staple food of traditional Italian cuisine, with the first reference dating to 1154 in Sicily. It is also commonly used to refer to the variety of pasta dishes. Typically, pasta is a noodle made from an unleavened dough of a durum wheat flour mixed with water or eggs and formed into sheets or various shapes, then cooked by boiling or baking. It can also be made with flour from other cereals or grains. Pastas may be divided into two broad categories, dried (pasta secca) and fresh (pasta fresca).
Most dried pasta is commercially produced via an extrusion process. Fresh pasta was traditionally produced by hand, sometimes with the aid of simple machines, but today many varieties of fresh pasta are also commercially produced by large-scale machines, and the products are widely available in supermarkets.
Both dried and fresh pasta come in a number of shapes and varieties, with 310 specific forms known variably by over 1300 names having been documented. In Italy the names of specific pasta shapes or types often vary with locale. For example, the form cavatelli is known by 28 different names depending on region and town. Common forms of pasta include long shapes, short shapes, tubes, flat shapes and sheets, miniature soup shapes, filled or stuffed, and specialty or decorative shapes.

Music Inc. is an album by American jazz trumpeter Charles Tolliver's Music Inc. with a Big Band recorded in 1970 and first released on the Strata-East label.
Reception
The Allmusic review by Jason Ankeny awarded the album 4½ stars stating "The remarkable Music, Inc. Big Band remains the apotheosis of trumpeter Charles Tolliver's singular creative vision. Rarely if ever has a big band exhibited so much freedom or finesse, while at the same time never overwhelming the virtuoso soloists on whom the performances pivots".

Al termine, stendere la pasta con il matterello: si consiglia di stendere la pasta a uno spessore molto sottile, quasi trasparente. INGREDIENTI:
500 gr di farfalle o ciò che vi piace,
zucchina, melanzana e peperone ...
PASTA FREDDA CON VERDURE! I sapori della nostra puglia sulla nostra tavola
INGREDIENTI:
500 gr di farfalle o ciò che vi piace,
zucchina, melanzana e peperone rosso a pezzettini,
pomodorini a pezzettini,
basilico,
carciofi a spicchi ,
sale,
cipolla affettata finemente,
olio d'oliva,
olive verdi e nere snocciolate,
pochi capperi.
PREPARAZIONE:
Innanzitutto cucinare la pasta, scolarla e irrorarla con un pò d'olio d'oliva in modo che non si attacchi una con l'altra. Nel frattempo che si raffredda, mettere un pò d'olio nella pentola antiaderente , la cipolla e soffriggere, aggiungere le zucchine, la melanzana , il peperone tagliati a pezzettini , un goccio d'acqua e il sale. Far cuocere per 7-8 minuti e poi aggiungere i capperi, i carciofi, le olive e cuocere per altri 3-4 minuti e poi spegnere. Versare il composto nella pasta , aggiungere i pomodorini, basilico tritato ed è fatta... I sapori della nostra puglia sulla nostra tavola.. Spero che la mia ricetta vi sia piaciuta! Ingredienti Ricetta
Per 450 g di pasta
350 g di farina bianca di tipo 00
180 ml circa di acqua
8 g di sale
10 ml di aceto o di vino bianco secco
3 cucchiai di olio extravergine d'oliva
Preparazione Pasta Matta o Pasta Morta
1. Setacciare la farina bianca e raccoglierla in una ciotola.
Lo sapevi che…
SETACCIARE LA FARINA è un importante accorgimento per arearla, ovvero per ossigenarla: incorporando l’aria al suo interno, l’impasto risulterà più leggero e soffice perché la maggior quantità di aria intrappolata nella farina permetterà un miglior assorbimento di acqua, di conseguenza il glutine si formerà più agevolmente. Inoltre, questa semplice procedura ci permetterà di ottenere un impasto privo di grumi.
La presenza di ACETO O DI VINO favorisce la riduzione del pH totale: questo accorgimento facilita lo sviluppo del glutine e la pasta si stenderà più facilmente perché sarà più elastica.
La pasta matta prende il nome anche di “PASTA MORTA” per l’assenza di lieviti: questa sfoglia, infatti, non gonfia in cottura!
2. Sciogliere il sale in poca acqua tiepida: l’accorgimento è utile per evitare che la pasta presenti macchie bianche sulla superficie.
3. Al centro della farina, versare l’olio extravergine d’oliva, il vino (o l’aceto), il sale con l’acqua e impastare gli ingredienti aggiungendo a filo l’acqua rimanente.
4. Una volta ottenuta la giusta consistenza, avvolgere la pasta nella pellicola trasparente e lasciar riposare per almeno mezz’ora.
5. Al termine, stendere la pasta con il matterello: si consiglia di stendere la pasta a uno spessore molto sottile, quasi trasparente. La pasta matta o pasta morta è perfetta per realizzare torte salate croccanti oppure strudel dolci.
6. Una volta stesa, la pasta può essere farcita a piacere: per la cottura, si consiglia 180°C (ventilato) per 20-30 minuti, in base al tipo di preparazione.

PASTA FREDDA CON VERDURE! I sapori della nostra puglia sulla nostra tavola INGREDIENTI: 500 gr di farfalle o ciò che vi piace, zucchina, melanzana e peperone rosso a pezzettini, pomodorini a pezzettini, basilico, carciofi a spicchi , sale, cipolla affettata finemente, olio d'oliva, olive verdi e nere snocciolate, pochi capperi. PREPARAZIONE: Innanzitutto cucinare la pasta, scolarla e irrorarla con un pò d'olio d'oliva in modo che non si attacchi una con l'altra. Ingredienti Ricetta
Per 450 g di pasta
350 g di farina bianca di tipo 00
180 ml circa di acqua
8 g di sale

Preparazione Pasta Matta o Pasta Morta
1. Setacciare la farina bianca e raccoglierla in una ciotola.
Lo sapevi che…
SETACCIARE LA FARINA è un importante accorgimento per arearla, ovvero per ossigenarla: incorporando l’aria al suo interno, l’impasto risulterà più leggero e soffice perché la maggior quantità di aria intrappolata nella farina permetterà un miglior assorbimento di acqua, di conseguenza il glutine si formerà più agevolmente. Inoltre, questa semplice procedura ci permetterà di ottenere un impasto privo di grumi.
La presenza di ACETO O DI VINO favorisce la riduzione del pH totale: questo accorgimento facilita lo sviluppo del glutine e la pasta si stenderà più facilmente perché sarà più elastica.
La pasta matta prende il nome anche di “PASTA MORTA” per l’assenza di lieviti: questa sfoglia, infatti, non gonfia in cottura!
2. Sciogliere il sale in poca acqua tiepida: l’accorgimento è utile per evitare che la pasta presenti macchie bianche sulla superficie.
3. Al centro della farina, versare l’olio extravergine d’oliva, il vino (o l’aceto), il sale con l’acqua e impastare gli ingredienti aggiungendo a filo l’acqua rimanente.
4. Una volta ottenuta la giusta consistenza, avvolgere la pasta nella pellicola trasparente e lasciar riposare per almeno mezz’ora.

Ingredienti Ricetta
Per 450 g di pasta
350 g di farina bianca di tipo 00
180 ml circa di acqua
8 g di sale
10 ml di aceto o di vino bianco secco
3 cucchiai di olio extravergine d'oliva
Preparazione Pasta Matta o Pasta Morta
1. Setacciare la farina bianca e raccoglierla in una ciotola.
Lo sapevi che…
SETACCIARE LA FARINA è un importante accorgimento per arearla, ovvero per ossigenarla: incorporando l’aria al suo interno, l’impasto risulterà più leggero e soffice perché la maggior quantità di aria intrappolata nella farina permetterà un miglior assorbimento di acqua, di conseguenza il glutine si formerà più agevolmente. Inoltre, questa semplice procedura ci permetterà di ottenere un impasto privo di grumi.
La presenza di ACETO O DI VINO favorisce la riduzione del pH totale: questo accorgimento facilita lo sviluppo del glutine e la pasta si stenderà più facilmente perché sarà più elastica.
La pasta matta prende il nome anche di “PASTA MORTA” per l’assenza di lieviti: questa sfoglia, infatti, non gonfia in cottura!
2. Sciogliere il sale in poca acqua tiepida: l’accorgimento è utile per evitare che la pasta presenti macchie bianche sulla superficie.
3. Al centro della farina, versare l’olio extravergine d’oliva, il vino (o l’aceto), il sale con l’acqua e impastare gli ingredienti aggiungendo a filo l’acqua rimanente.
4. Una volta ottenuta la giusta consistenza, avvolgere la pasta nella pellicola trasparente e lasciar riposare per almeno mezz’ora.
