The welcome mat goes out in Double Bay on Wednesday for one of winter's most anticipated restaurant openings, and Matteo restaurant already has a little brother on the way.

The Bay Street start-up from Orazio D'Elia (Maurice Terzini's recently exited business partner and chef at Da Orazio, Bondi), Kittyhawk's Eddie Levy and The Island's Adam Abrams, has landed a site in the city where the trio will open a second venue.

The city venture will open early in 2018, giving them plenty of time to fine tune the product in Double Bay. Located next to Mrs Sippy, Matteo slides into the site formerly occupied by Limoncello, where D'Elia worked when he first landed in Sydney from Italy.

While the room has been given a design overhaul the chef describes as the Italian Riveria. he's retained a memento of his Limoncello stint. "We've kept the little fountain – we might put a fish in it for the kids," he says.

While a couple of Da Orazio dishes will be transplanted from Bondi, D'Elia wants to up the game. "We're double proofing the pizza dough to get a light, bubbly crust," he says. "And I'm going to do a pizza with a whole burrata in the middle you'll cut into."

The Naples-raised chef says he will also expand the non-pizza part of the menu with a scialatielli dish, and buffalo mozzarella on lemon leaves.
