notes
- This mixture is really dry before you add the zucchini. Stir in the zucchini and chocolate chips until well combined.
- You don't need to squeeze moisture out of the grated zucchinis.
- If you don't have chocolate chips, you can add 200g of melted chocolate in its place.
- This is such a sneaky way to get kids to eat zucchini! Also try these sweet apple and zucchini muffins.
- This tasty zucchini slice and this one are another great way to slip in some extra veggies into your kids’ meals. Serve it up as a side with dinner and watch it disappear off their plates!
- Got leftover zucchini from making these brownies? Use it up in these crunchy fritters, or in this filling frittata.
- If these brownies have convinced your kids that zucchini isn’t so bad, try adding a little of the grated green stuff to mini quiches to put in lunch boxes, or bake yummy cheese and zucchini scones for an after school snack. Â
- This zucchini and chorizo slice also makes a tasty alternative to sandwiches in the lunch box.
- If zucchini was on special this week, here are some other great ways to use it up! Try making tasty zucchini bread (which is heavenly served with a smattering of butter), zucchini bake for a midweek meal, or cheesy zucchini slice as an alternative to sandwiches for lunch.
