To make this for yourself you will need: For the cookie dough: ♡ 225g/8oz/1 cup unsalted butter ♡ 175g/6oz/1cup caster sugar ♡ 185g/6½oz/1 cup soft brown sugar ♡ 2 medium eggs ♡ 400g/14oz/1½ cups plain flour ♡ 1½ tsps. bicarbonate of sofa ♡ 200g/7oz/1 cup white chocolate chips ♡ 200g/7oz/1 cup dark chocolate chips For the cake: ♡ 200g/7oz/¾ cup unsalted butter ♡ 200g/7oz/1 cup caster sugar ♡ 200g/7oz/2¼ cups self-raising flour ♡ 3 medium eggs ♡ Pinch of salt ♡ 1 tsp. vanilla extract ♡ 2-3 tbsp. milk For the buttercream: ♡ 400g/14oz/1¾ cups unsalted butter ♡ 800g/28oz/6 cups icing sugar or powdered sugar ♡ 1 tsp. vanilla extract ♡ 3 tbsp. milk ♡ Blue food colouring paste For the decoration: ♡ White and black fondant Equipment you will need: ♡ Two 7” sandwich tins, although you could use 2 ♡ Whisk ♡ Mixer ♡ Spatula ♡ Baking paper ♡ Baking sheet ♡ Sieve ♡ Large mixing bowl ♡ Jug Method: 1. Make the cookie dough by creaming butter, caster sugar and soft brown sugar in a bowl. Then in a separate jug, add 1 tsp. vanilla extract into beaten eggs and slowly add this into your mix. Then sift in your flour in two batches and mix well. Finally add your chocolate chips. Form four good-sized balls of cookie dough, pat down on a baking sheet and bake for 10-12 minutes on 160°C/350°F fan. Divide the rest of the cookie dough between two 7” sandwich tins and bake at 180°C/350°F fan for around 20 minutes. Leave to cool on a wire rack. 2. To make the cake, cream the butter and caster sugar until soft and light. In a separate jug, add a tsp. vanilla extract to 3 beaten eggs, and then add this to your mixture bit-by-bit until light and fluffy. Sift in the flour and a pinch of salt and fold in with a large metal spoon. Then add 2-3 tbsp. milk until it can easily drop off the spoon. Fill two 7” sandwich tins with the mixture, almost to the top and bake at 160°C fan /350°F for 20-25 minutes or until golden brown. Leave to cool on a wire rack. 3. To make the buttercream, cream the butter until soft and pale. Then add the icing sugar in 2 batches. Add 2 tbsp. milk and 1 tsp. vanilla extract and mix well. You can add a further two tbsp. of milk if needed. In a separate jug add ⅓ of the buttercream and mix with ½ tsp. of blue food colouring paste. 4. To create the mouth and eyes, roll out black fondant and cut out a semi-circle shape. Then use a piping nozzle to cut out two circles for the pupils. Then roll out 1 ball of white fondant and cut in half. Reshape this if it squashes out of shape when cut and using a little water stick down the pupils on the eyes; one should be looking up and one looking down. 5. To assemble, use a little buttercream to stick down the first layer of cookie, then cover with buttercream and add a layer of cake. Cover this layer with buttercream and repeat with the other two layers. Then cover the outside of the cake with buttercream and scrape off any excess. 6. To decorate place on the mouth and eyes and pipe on the blue buttercream using a large star nozzle. Pipe half way down the cake and cover the bottom with broken cookies.
