Pakistani cuisine

Pakistani cuisine (Urdu: پاکستانی پکوان‎) is a refined blend of various regional cooking traditions of South Asia. Pakistani cuisine is very similar to North Indian cuisine, but incorporates noticeable Central Asian and Middle Eastern influences and is more meat-oriented. The fusion Mughlai cuisine is the most popular cuisine found in most Pakistani restaurants.

Within Pakistan, cuisine varies greatly from region to region, reflecting the country's ethnic and cultural diversity. Food from the eastern provinces of Punjab and Sindh can be highly seasoned and spicy, which is characteristic of the flavors of the South Asian region. Food in other parts of Pakistan, particularly Balochistan, Azad Kashmir, Gilgit-Baltistan, Khyber Pakhtunkhwa, and the Federally Administered Tribal Areas also hold distinct tastes based on various regional influences.

International cuisine and fast food are popular in the cities. Blending local and foreign recipes (fusion food), such as Pakistani Chinese cuisine, is common in large urban centres. Furthermore, as a result of lifestyle changes, ready made masala mixes (mixed and ready to use spices) are becoming increasingly popular. However, given the diversity of the people of Pakistan, cuisines generally differ from home to home and may be different from the mainstream Pakistani cuisine.

Street food

Street food is ready-to-eat food or drink sold by a hawker, or vendor, in a street or other public place, such as at a market or fair. It is often sold from a portable food booth,food cart, or food truck and meant for immediate consumption. Some street foods are regional, but many have spread beyond their region of origin. Most street foods are classed as both finger food and fast food, and are cheaper on average than restaurant meals. According to a 2007 study from the Food and Agriculture Organization, 2.5 billion people eat street food every day.

Today, people may purchase street food for a number of reasons, such as to get flavorful food for a reasonable price in a sociable setting, to experience ethnic cuisines, or for nostalgia.

History

Small fried fish were a street food in ancient Greece, however, Theophrastus held the custom of street food in low regard. Evidence of a large number of street food vendors were discovered during the excavation of Pompeii. Street food was widely consumed by poor urban residents of ancient Rome whose tenement homes did not have ovens or hearths. Here, chickpea soup with bread and grain paste were common meals. In ancient China, street food generally catered to the poor, however, wealthy residents would send servants to buy street food and bring it back for them to eat in their homes.

Karachi

Karachi (Urdu: کراچی‎ / ALA-LC: Karācī IPA: [kəˈrɑːˌtʃi]) is the largest city of Pakistan and the capital of the province of Sindh as well as one of the largest and most populous metropolitan cities in the world. It is also the main seaport and financial center of the country. Karachi metro has an estimated population of over 23.5 million people as of 2013, and area of approximately 3,527 km² (1,362 sq mi), resulting in a density of more than 6,000 people per square kilometre (15,500 per square mile).

Karachi is the 7th largest urban agglomeration in the world, and the second largest in the Muslim world. It is Pakistan's centre of banking, industry, economic activity and trade and is home to Pakistan's largest corporations, including those involved in textiles, shipping, automotive industry, entertainment, the arts, fashion, advertising, publishing, software development and medical research. The city is a hub of higher education in South Asia and the Muslim world.

Karachi is also ranked as a beta world city. It was the capital of Pakistan until Islamabad was constructed as a capital to spread development evenly across the country and to prevent it from being concentrated in Karachi. Karachi is the location of the Port of Karachi and Port Bin Qasim, two of the region's largest and busiest ports. After the independence of Pakistan, the city population increased dramatically when hundreds of thousands of Muslim Muhajirs from India and from other parts of South Asia came to settle in Karachi.

Music Inc.

Music Inc. is an album by American jazz trumpeter Charles Tolliver's Music Inc. with a Big Band recorded in 1970 and first released on the Strata-East label.

Reception

The Allmusic review by Jason Ankeny awarded the album 4½ stars stating "The remarkable Music, Inc. Big Band remains the apotheosis of trumpeter Charles Tolliver's singular creative vision. Rarely if ever has a big band exhibited so much freedom or finesse, while at the same time never overwhelming the virtuoso soloists on whom the performances pivots".
