Recipe: Delicious lemon slice from The Boatshed Cafe

Queenstown local Janet Fisher regularly pops into The Boatshed Cafe and Bistro for a favourite sweet treat.
"I really enjoy its lemon slice and wondered if you could get the recipe," Fisher says.
We contacted the lakefront cafe on her behalf, which happily supplied its recipe.
LEMON DELICIOUS SLICE
Ingredients:
Base
225g butter
½ cup caster sugar
2 cups flour
Topping
6 eggs
2 ½ cups caster sugar
2 tablespoons grated lemon rind
1 cup lemon juice
½ cup self raising flour
Method
Beat the butter and caster sugar together until light and fluffy then sift in the flour and mix. Press the mix into a greased and lined tin. Refrigerate for half an hour then bake at 180C for 15 minutes. For the topping whisk eggs, caster sugar, lemon rind and juice together then fold in flour. Pour over the cooled base and bake at 160C for a further half hour or until set.
