Domino Foods, Inc. is a US company owned by American Sugar Refining Inc. that markets sugar under the brand names Domino, C&H, Florida Crystals and Redpath.
In 1799, William Havemeyer, who had been an apprentice of a London sugar refiner, was hired by Mr. Edmund Seaman to manage his sugar refinery in New York City. His brother Frederick Havemeyer joined him in 1802. On January 1, 1807, a new plant, called a sugar bakery, was opened as the partnership Wm. and F.C. Havemeyer at Vandam Street. In 1859 the business moved to the waterfront in Williamsburg, and was known as Havemeyer, Townsend & Co Refinery. By 1864, the refinery was the most modern of its time. After a fire destroyed the refinery in 1882, the current plant was rebuilt and was the largest sugar refinery in the United States. After the Sugar Trust was ruled illegal in 1891, Henry Osborne Havemeyer and Theodore A. Havemeyer were elected as chairman and president, respectively, of the American Sugar Refining Company. In May 1896, American Sugar became one of the original 12 companies in the Dow Jones Industrial Average.

The original refinery was built in 1856, and by 1870 it processed more than half of the sugar used in the United States. The Havemeyer family established their first sugar refinery on Vandam Street in Manhattan at the turn of the nineteenth century. Frederick C. Havemeyer Jr. (1807-1891) expanded the business in 1857 after he established the longstanding South 3rd Street factory on the Williamsburg waterfront. His son, Henry Havemeyer (1847-1907), named the company Domino’s Sugar in the early 1900s. Ships delivered sugar cane from across the world to the Domino Sugar Plant in Brooklyn, which was initially called the American Sugar Refinery Company. Several other factories followed, which created the greatest center of sugar refining in the world at that point in time. By 1870, more than half of the sugar consumed in the entire country was refined there. The largest of all plants is that founded in 1858 by Frederick C. Havemeyer, and now famous as the Havemeyers & Elde Refinery. The business was so successful that in May 1896, American Sugar became one of the original twelve companies in the Dow Jones Industrial Average. A fire in 1882 caused the plant to be completely rebuilt in brick and stone, at least 10 stories high. Those buildings remain, albeit with some alterations made over the years.

Sugar is the generalized name for sweet, short-chain, soluble carbohydrates, many of which are used in food. They are carbohydrates, composed of carbon, hydrogen, and oxygen. There are various types of sugar derived from different sources. Simple sugars are called monosaccharides and include glucose (also known as dextrose), fructose and galactose. The table or granulated sugar most customarily used as food is sucrose, a disaccharide. (In the body, sucrose hydrolyses into fructose and glucose.) Other disaccharides include maltose and lactose. Longer chains of sugars are called oligosaccharides. Chemically-different substances may also have a sweet taste, but are not classified as sugars. Some are used as lower-calorie food substitutes for sugar described as artificial sweeteners.
Sugars are found in the tissues of most plants, but are present in sufficient concentrations for efficient extraction only in sugarcane and sugar beet. Sugarcane refers to any of several species of giant grass in the genus Saccharum that have been cultivated in tropical climates in South Asia and Southeast Asia since ancient times. A great expansion in its production took place in the 18th century with the establishment of sugar plantations in the West Indies and Americas. This was the first time that sugar became available to the common people, who had previously had to rely on honey to sweeten foods. Sugar beet, a cultivated variety of Beta vulgaris, is grown as a root crop in cooler climates and became a major source of sugar in the 19th century when methods for extracting the sugar became available. Sugar production and trade have changed the course of human history in many ways, influencing the formation of colonies, the perpetuation of slavery, the transition to indentured labour, the migration of peoples, wars between sugar-trade–controlling nations in the 19th century, and the ethnic composition and political structure of the New World.

A look into the immense factory complex on the Williamsburg waterfront, the former Domino Sugar Refinery, that will be converted into a mixed-use development by Two Trees Management and SHoP Architects. We don't profess this to be a professional video of the Domino Sugar Refinery in Williamsburg. It's a compilation of out-takes from a project which included this behind the scenes look at the development of Domino Sugar Factory with developer Two Trees Management. For the project, we were using a fish-eye lens and later un-distorting the footage for an immersive experience, but this video shows the raw footage which was then auto-stabilized by YouTube. Provocative artist Kara Walker will be in conversation with Ava DuVernay, filmmaker and winner of the 2012 Sundance Best Director Award. Two of the most celebrated artists working today, both use narratives drawn from real life experiences to tell important stories from the perspective of African-American women. The recent success of Kara Walker's Sugar Baby installation at the Domino Sugar factory in Brooklyn and Ava DuVernay's much anticipated film Selma are bringing difficult yet vital American histories to a wide-ranging public.
