Peruvian cuisine reflects local practices and ingredients—including influences from the indigenous population including the Inca and cuisines brought in with immigrants from Europe (Spanish cuisine, Italian cuisine, German cuisine), Asia (Chinese cuisine and Japanese cuisine) and West Africa. Without the familiar ingredients from their home countries, immigrants modified their traditional cuisines by using ingredients available in Peru. The four traditional staples of Peruvian cuisine are corn, potatoes and other tubers, Amaranthaceaes (Quinoa, Kañiwa and kiwicha) and legumes (beans and lupins). Staples brought by the Spanish include rice, wheat and meats (beef, pork and chicken). Many traditional foods—such as Quinoa, kiwicha, chili peppers, and several roots and tubers have increased in popularity in recent decades, reflecting a revival of interest in native Peruvian foods and culinary techniques. Chef Gaston Acurio has become well known for raising awareness of local ingredients. The US food critic Eric Asimov has described it as one of the world's most important cuisines and as an exemplar of fusion cuisine, due to its long multicultural history.

Peru (i/pəˈruː/; Spanish: Perú [peˈɾu]; Quechua: Piruw [pɪɾʊw];Aymara: Piruw [pɪɾʊw]), officially the Republic of Peru (Spanish: República del Perú ), is a country in western South America. It is bordered in the north by Ecuador and Colombia, in the east by Brazil, in the southeast by Bolivia, in the south by Chile, and in the west by the Pacific Ocean. Peru is an extremely biodiverse country with habitats ranging from the arid plains of the Pacific coastal region in the west to the peaks of the Andes mountains vertically extending from the north to the southeast of the country to the tropical Amazon Basin rainforest in the east with the Amazon river.
Peruvian territory was home to ancient cultures spanning from the Norte Chico civilization in Caral, one of the oldest in the world, to the Inca Empire, the largest state in Pre-Columbian America. The Spanish Empire conquered the region in the 16th century and established a Viceroyalty with its capital in Lima, which included most of its South American colonies. Ideas of political autonomy later spread throughout Spanish America and Peru gained its independence, which was formally proclaimed in 1821. After the battle of Ayacucho, three years after proclamation, Peru ensured its independence. After achieving independence, the country remained in recession and kept a low military profile until an economic rise based on the extraction of raw and maritime materials struck the country, which ended shortly before the war of the Pacific. Subsequently, the country has undergone changes in government from oligarchic to democratic systems. Peru has gone through periods of political unrest and internal conflict as well as periods of stability and economic upswing.
Lima /ˈliːmə/ is the capital and the largest city of Peru. It is located in the valleys of the Chillón, Rímac and Lurín rivers, in the central coastal part of the country, overlooking the Pacific Ocean. Together with the seaport of Callao, it forms a contiguous urban area known as the Lima Metropolitan Area. With a population of almost 10 million, Lima is the most populous metropolitan area of Peru, and the third largest city in the Americas (as defined by "city proper"), just behind São Paulo and Mexico City.
Lima was founded by Spanish conquistador Francisco Pizarro on January 18, 1535, as Ciudad de los Reyes. It became the capital and most important city in the Spanish Viceroyalty of Peru. Following the Peruvian War of Independence, it became the capital of the Republic of Peru. Today, around one-third of the Peruvian population lives in the metropolitan area.
Lima is home to one of the oldest higher learning institutions in the New World. The National University of San Marcos, founded on May 12 of 1551, during Spanish colonial regime, is the oldest continuously functioning university in the Americas.

Carmen Mochizuki shares her story of the hardships Japanese Peruvians experienced before and after being taken from Peru and forced into the Crystal City Internment Camp in Texas during WWII.
When we first heard Peru has a special kind of Japanese Peruvian Cuisine we couldn't wait to get our chopsticks on it. Given that we both love Japanese food and we both adore Peruvian cuisine, some kind of hybrid between the two, sounded very enticing. After researching for a while, we decided to visit TAIKEN SUSHI LOUNGE located in Miraflores. The restaurant decor was tastefully put together making us feel like we were having an authentic Japanese restaurant experience. We ended up ordering several Nikkei dishes including acebichado, tempura with local fish, sushi, nigiri and sashimi. It was an incredible meal and we ended up getting some complimentary ceviche inspired rolls near the end of our meal. We couldn't even finish it all. If you'd like to visit this restaurant here is the addres...

Across the world, Nikkei is a term for Japanese people living abroad. In Peru it also signifies a kind of Peruvian-Japanese fusion cuisine. Early Nikkei immigrants added small Japanese touches to Peruvian ingredients. Today’s Nikkei chefs bring even more Japanese flavor to the table. Travelers can experience high-end Nikkei cuisine at such spectacular new restaurants as Maido, helmed by Mitsuharu Tsumura, a young Peruvian-Japanese chef trained in Japan. Several older family-run Nikkei restaurants, including El Encuentro Otani, have also been inspired to innovate: Once a week, Chef Lalo Otani serves special ceviche sushi rolls with a creamy sauce of leche de tigre (ceviche juice).

On September 11th, 2001, I was living in Brooklyn and found myself close to the World Trade Towers as they burned and fell to the ground. * Foolishly close, I caught the collapse of the 1st Tower on tape, and was in a crowd of people that ran from and was caught in a huge cloud of dust. In this strange dust storm, I talked to a distressed man who said he was "the building manager", and caught a ride from a Peruvian good Samaritan back to Brooklyn with 2 Japanese girls who had been in the tower when it was hit. Camera rolling the entire time. 10 years later, I took out the tape and watched it again, and am sharing it with you. * Q: How did it happen that I was there? I woke up that morning in Brooklyn to the news that the World Trade Towers were on fire. An aspiring videographer, I gr...
