Houston (i/ˈhjuːstən/ HYOO-stən) is the most populous city in Texas and the fourth most populous city in the United States. With a census-estimated 2014 population of 2.239 million people, within a land area of 599.6 square miles (1,553 km2), it also is the largest city in the Southern United States, as well as the seat of Harris County. It is the principal city of Houston–The Woodlands–Sugar Land, which is the fifth most populated metropolitan area in the United States.
Houston was founded in 1836 on land near the banks of Buffalo Bayou (now known as Allen's Landing) and incorporated as a city on June 5, 1837. The city was named after former General Sam Houston, who was president of the Republic of Texas and had commanded and won at the Battle of San Jacinto 25 miles (40 km) east of where the city was established. The burgeoning port and railroad industry, combined with oil discovery in 1901, has induced continual surges in the city's population. In the mid-twentieth century, Houston became the home of the Texas Medical Center—the world's largest concentration of healthcare and research institutions—and NASA's Johnson Space Center, where the Mission Control Center is located.
Texas /ˈtɛksəs/ (Spanish: Texas or Tejas [ˈtexas]) is a state in the United States of America. It is the second most populous and second largest state by area in the US. Geographically located in the south central part of the country, Texas shares an international border with Mexico to the south and borders the states of New Mexico to the west, Oklahoma to the north, Arkansas to the northeast, and Louisiana to the east. Texas has an area of 268,820 square miles (696,200 km2) and a growing population of over 27.5 million residents (July 2015).
Houston is the largest city in Texas and the fourth-largest in the United States, while San Antonio is the second largest in the state and seventh largest in the United States. Dallas–Fort Worth and Greater Houston are the fourth and fifth largest United States metropolitan statistical areas, respectively. Other major cities include Austin (the state capital) and El Paso. Texas is nicknamed the Lone Star State to signify Texas as a former independent republic, and as a reminder of the state's struggle for independence from Mexico. The "Lone Star" can be found on the Texan state flag and on the Texan state seal. The origin of the state name, Texas, is from the word, "Tejas", which means 'friends' in the Caddo language.

In Fall of 2009, I hunted black wildebeest in Africa in order to again "meet my meat." My wonderful guide was Chris Bolton, of Zungah Safaris, in Port Elizabeth, South Africa. After the hunt, we transported the meat to a well-known Cape Town Chef, Pete Goff, of The Kitchen Cowboys. This was a very emotional experience for me and my friend, Sonja Kroop, who was shooting most of the footage. We had not anticipated the hunt nor filming, when we arrived to visit a friend in Cape Town, so the footage quality is old mini-dv, not high quality HD. Some viewers may find this to be GRAPHIC CONTENT, as it shows the killing of an animal for food.
The Round-Up In Winter, 2009, Ashley Chiles and her two long-time Texas compadres, Amy Esacove & Patrice Shackelford decided to "meet their meat" on a wild boar hunt in South Texas. Ashley recruits two well-known Houston chefs: Bryan Caswell of Reef, El Real, & Little Bigs, as well as J.J. "Papa-Beav" Jones of Beavers Restaurant, and master boar-Hunter & guide, Lupe Flores.

AWARD: Bronze Remi Award in the Experimental/Dogma Section of the 43rd Worldfest Houston (US) SYNOPSIS: A TV travel show from Belgium on the culture and history of Jordan quickly shifts into a psychological thriller in which the TV host faces her own monstrous fears. The fairy-tale landscapes of Jordan become more and more grim in the eyes of it's schizophrenic guide who is haunted by the voice of the Edimmu, embittered “undead”, known to use the fears of its victims against themselves The story serves as a sort of metaphor for the troublesome times in Near/Middle East and the mutual mistrust between the East and the We...
Hero, Amy Esacove, field-dresses the wild boar I shot...under hunting guide, Lupe's guidance, while chefs Bryan Caswell and J.J. Jones & Patrice watching in awe. Bryan Caswell can be quoted in the film..."That's why I came, to see the field-dressing. I didn't believe you were going to do it." Of COURSE we do it. Do you think we're going to let the men of the world say, "they may shoot, but they let the guys do all the dirty work." NO WAY.
