Cheddar cheese is a relatively hard, off-white (or orange if spices such as annatto are added), sometimes "sharp" (i.e., acidic)-tasting, natural cheese. Originating in the British village of Cheddar in Somerset, cheeses of this style are produced beyond this region and in several countries around the world.
Cheddar is the most popular type of cheese in the UK, accounting for 51% of the country's £1.9 billion annual cheese market. It is also the second-most-popular cheese in the US (behind mozzarella), with an average annual consumption of 10 lb (4.5 kg) per capita. The United States produced approximately 3,000,000,000 lb (1,300,000 long tons; 1,400,000 tonnes) in 2014, and the UK 258,000 long tons (262,000 tonnes) in 2008. The term "Cheddar cheese" is widely used, but has no Protected Designation of Origin within the European Union, although only Cheddar produced from local milk within four counties of south west England may use the name "West Country Farmhouse Cheddar".

Cheese is a food derived from milk that is produced in a wide range of flavors, textures, and forms by coagulation of the milk protein casein. It comprises proteins and fat from milk, usually the milk of cows, buffalo, goats, or sheep. During production, the milk is usually acidified, and adding the enzyme rennet causes coagulation. The solids are separated and pressed into final form. Some cheeses have molds on the rind or throughout. Most cheeses melt at cooking temperature.
Hundreds of types of cheese from various countries are produced. Their styles, textures and flavors depend on the origin of the milk (including the animal's diet), whether they have been pasteurized, the butterfat content, the bacteria and mold, the processing, and aging. Herbs, spices, or wood smoke may be used as flavoring agents. The yellow to red color of many cheeses, such as Red Leicester, is produced by adding annatto. Other ingredients may be added to some cheeses, such as black pepper, garlic, chives or cranberries.

A complete guide from start to finish on how to make Artisan Farmstead Cheddar. The recipe: 1) Ripening: Add the starter culture (RA21 7.5DCU/100L + FLAV 54). Allow the milk to ripen for 50 minutes at 32C. pH should be about 6.7-6.6 2) Rennet: 5 minutes before the rennet add the colour (Annato 3CCs per 100L of milk) stir well then add the rennet to the milk. DO NOT dilute the rennet and leave it standing for a period of time before adding it to the vat. Stir for 3 minutes. 3) Cutting: After 50 minutes the curd should be ready to be cut. Test for firmness by laying the back of the hand flat on the surface of the curd near the side of the vat and gently pulling away. The curd should come cleanly from the side of the vat. This Cheddar Cheese has an exceptional flavour for a 6-month-old cheese. With the perfect crumbly texture and lingering aftertaste, this cheese will certainly feature on my next cheese platter when guests visit. The only thing I would have changed would be the salt content. In future cheddars, I will add 2 Tablespoons, and not the 1.5 Tablespoons that I used for this cheese. Interesting things happened to the cheese at 3 months and it's particularly apt that it's Old Hallows Eve! This is certainly the cheese update to match the occasion.
