Sesame zucchini salad

Green salads don’t have to be limited to leafy greens. Raw zucchini makes a great change for a green salad and with the Asian inspired dressing it is a tasty addition to the table.

Ingredients

500 grams zucchini (approx. 3 small zucchini)
3 tbsp fresh coriander, roughly chopped
3 tbsp almond butter
1 tbsp Tamari soy sauce (can use traditional however it wouldn’t be gluten free)
1 tbsp honey
1 tbsp lemon juice
1 tbsp tahini
3 tbsp sesame seeds

Method

Either by hand or using a food processor finely grate the zucchini and add to a medium sized 
bowl.

Add in coriander and mix gently.

In a small bowl combine the remaining ingredients with the exception of the sesame seeds. 

Whisk with a fork until the dressing is smooth. Pour over zucchini and mix in with a fork.

While mixing sprinkle in two tbsp. of sesame seeds.

Sprinkle the remaining seeds on top and serve.
