Chocolate chia mousse

Chia seeds are super popular at the moment and are while they maybe very small these seeds pack a powerful nutritional punch. To receive maximum benefit from chia seeds they are best soaked, so not only does this Chocolate Chia Mousse taste delicious, but it serves up a tonne of nutrients as well.

Ingredients

½ cup chia seeds

¼ cup cacao powder

400mls coconut cream

1 cup water

4 tbsp rice malt syrup

2 tsp vanilla extract

4 tbsp shredded coconut (optional topping)

 

 

Method

In a mixing bowl add chia seeds, cacao powder, coconut cream, water, rice malt syrup and vanilla mix gently with a fork until well blended. Spoon the mixture into 8 small jars, place on lids and then let it set in fridge overnight.

Remove from the fridge prior to serving and top with shredded coconut if desired.
