Samgyeopsal (삼겹살; Korean pronunciation: [sʰamɡjʌps͈al]) is a popular Korean dish that is commonly served as an evening meal. It consists of thick, fatty slices of pork belly meat. The meat, usually neither marinated nor seasoned, is cooked on a grill at the diners’ table. Usually diners grill the meat themselves and eat directly from a grill. It is typically served with ssamjang (Korean: 쌈장), vegetables, and lettuce leaves to wrap it in.
The literal meaning of the word is “three (sam; Korean: 삼(三)) layered (gyeop; Korean: 겹) flesh (sal;Korean: 살)”, referring to what appears to be three layers that are visible in the meat. One can also find ogyeopsal (Korean: 오겹살), with o meaning “five”.
Pork has increased in Trade and has opened a free trade agreement. China: Prefer pork offal,thus the increasing of frozen pork. Japan: Prefer loin and Boston butt. South Korea: Prefer fatty pork belly,which is Samgyeopsal.
According to a 2006 survey by Agricultural Cooperatives in Korea (Korean: 농업협동조합), 85% of South Korean adults surveyed stated their favorite pork is samgyeopsal. The survey also showed 70% of recipients eat the meat at least once a week. The high popularity of samgyeopsal makes it one of the most expensive parts of pork. South Korea imports wholesale samgyeopsal from Belgium, the Netherlands, and other countries for the purpose of price stabilization as imported pork is much cheaper than domestic.
The term Korean barbecue or Gogigui (meat roast) in Korean refers to the Korean method of roasting beef, pork, chicken, or other types of meat. Such dishes are often prepared at the diner's table on gas or charcoal grills that are built into the table itself. Some Korean restaurants that do not have built-in grills provide portable stoves for diners to use at their tables.
The most representative form of gogigui is bulgogi usually made from thinly sliced marinated beef sirloin or tenderloin. Another popular form of it is galbi made from marinated beef short ribs. However, gogigui also includes many other kinds of marinated and unmarinated meat dishes, and can be divided into several categories. Korean barbecue is not only popular among Koreans, but also has gained popularity internationally.
Bulgogi is the most popular variety of Korean barbecue. Before cooking, the meat is marinated with a mixture of soy sauce, sugar, sesame oil, garlic, and pepper. It is traditionally cooked using gridirons or perforated dome griddles that sit on braziers, but pan-cooking has become common, as well.

Pork belly is Korea’s favorite part of pork. In Korea, we call it “Samgyupsal” which means 3-layer meat because of the fat and meat layers. Samgyupsal is best cooked on grill pan. I have kimchi, yangpa jang(onion pickles in soy sauce), myungyi namul(Korean ramp pickle) ,pa buchu muchim(green onion salad with chives) and doenjang jjigae(soybean paste stew) as sides. Other parts of pork are just as good grilled this way. ;-D Also, try eating it in lettuce and perilla leaf warps.
