After eight years of single-handedly deciding the pecking order of Sydney's business community, Jeremy Courmadias, Rockpool Bar and Grill's chief table director (and calamari expert) has been kicked upstairs to assume the directorship of food and beverage at the Human Ponytail, Neil Perry's recently merged gastro-group.

Prior to deciding who sat in Sydney lunch Siberia and who sat in the restaurant's inner-circle alongside Maurice Newman, the unflappable Courmadias spent 10 years as boss of London's Rockpool equivalent, Le Caprice. And while we're delighted for Jeremy, it leaves us in a bind. Who are we going to call for those last-minute reservations? Some people really only ever think of themselves ...
