A police document claims Michel wanted to "kill the monster" in his brother and "that wasn't Patrick anymore".
Michel's ex-wife testified to police there had been a series of recent incidents between the pair.
Michel has been remanded in custody and his case adjourned until April 5.
Patrick worked as the head chef at the Karana Downs Golf Club.
The club posted a tribute on their Facebook page.
