Mini Portobello Margarita Pizzas
6 portobello mushrooms, stems removed
1/2 cup tomato sauce or pesto
1 cup mozzarella, shredded
fresh thyme
basil for garnish
toppings of choice (olives, pepperoni, onions, tomatoes, pepperoni, hot peppers, bacon…)
oil
salt and pepper to taste
Preheat oven to 375ºF.
Place mushrooms on a greased baking sheet and season with salt and pepper to taste. Bake for 10 minutes.
Remove from oven and add toppings tomato sauce (or pesto), mozzarella and toppings of choice.
Bake for another 10 minutes or until toppings are cooked through and cheese is melted. Garnish with fresh thyme and basil.
*If using bacon or sausage, make sure meat is precooked before using as a topping!
Enjoy!
Chili Cheese Stuffed Zucchini
4 zucchini
1 lb ground beef
1 onion, finely diced
2 garlic cloves, minced
2 tbsp chili seasoning
1/2 tsp ground cumin
14oz can diced tomatoes
1/2 cup cheddar cheese
1/4 cup cilantro, chopped
salt and pepper to taste
For the zucchini, cut them in half lengthwise and scoop out the seeds using a spoon. Set aside. Arrange zucchini halves on a non-stick baking sheet and season with salt and pepper. Set aside.
In a large saucepan, add ground beef and fry until cooked through. Add onion and zucchini seeds and cook for another 2 minutes. Add garlic, chili seasoning and cumin and cook for another minute. Add diced tomatoes and bring mixture to a boil. Reduce to a simmer and allow to cook until slightly thickened. Season with salt and pepper to taste. If you like a bit of heat, go ahead and add some chili flakes as well.
Fill each zucchini with chili. Bake at 400ºF for 15-20 minutes. Top with cheddar cheese and broil for 2-3 minutes.
Serve immediately with fresh cilantro or store in the refrigerator for up to 3 days.

Taco Stuffed Peppers
3 bell peppers, cut in half and seeds removed (leave green stems on)
1 lb ground chicken
1 onion, finely diced
3 cloves garlic, minced
3/4 cup rice, cooked
1 cup black beans, rinsed and drained
1 cup corn, fresh or frozen
1 can diced tomatoes (14oz)
2 tbsp taco seasoning
1/2 cup cheddar cheese or Monterey jack, grated
oil
In a large saucepan, on medium-high heat, add oil. Add ground chicken and fry until cooked through. Add onion and cook for another 3 minutes. Add garlic and rice and cook for another minute. Add beans, corn, tomatoes and taco seasoning. Allow mixture to reduce and thicken slightly.
Stuff peppers and place on a well greased baking dish.
Top each pepper with cheese and bake at 350ºF for 15-20 minutes.
Garnish with taco toppings of choice such as sour cream, cilantro and green onions.

Here is what you'll need!
Bacon Asparagus Pastry Twists
Serves 2-3
INGREDIENTS
1 sheet puff pastry, thawed
6-8 slices bacon
12-15 asparagus spears
1 egg, beaten
Salt
Pepper
PREPARATION
Preheat oven to 400°F/200°C.
Slice the puff pastry into 1-centimeter strips.
Slice the bacon in half lengthwise into thin strips.
Wrap a strip of bacon around an asparagus spear in a spiral.
Wrap a strip of puff pastry around the asparagus, looping it in between the bacon spiral.
Repeat with the rest of the asparagus.
Place the wrapped spears on a baking tray lined with parchment paper.
Brush them with egg wash, then sprinkle a pinch of salt & pepper on top.
Bake for 18 minutes, until golden brown and puffed.
Serve!
Creamy Tuscan Chicken
Serves 2-3
INGREDIENTS
4 chicken thighs, bone-in & skin-on
2 teaspoons salt (for the chicken)
1 teaspoon pepper (for the chicken)
1 tablespoon oil
3 cloves garlic, chopped
½ onion, diced
1 tomato, diced
2 cups spinach
2 cups heavy cream
1 teaspoon salt
1 teaspoon pepper
½ cup grated parmesan
2 tablespoons parsley, chopped
PREPARATION
Season the chicken with the salt & pepper, making sure to mix it in evenly.
Heat oil in a skillet over medium-low heat.
Place the chicken thighs skin side down in the skillet and cook for about 13 minutes in order to crisp up the skin. Move the chicken around from time to time to ensure it cooks evenly. The skin should be hard to the touch.
Flip the chicken, then cook for about another 15 minutes until the chicken is fully cooked. Remove from pan.
Add the garlic and onion, stirring until onions are translucent. Stir in the tomatoes and spinach until the spinach is wilted.
Add the heavy cream, salt, and pepper, bringing to a boil.
Add the parmesan cheese and parsley, stirring until the sauce has thickened slightly.
Place the chicken back in the pan, spooning the sauce on top of the chicken.
Serve!
Chocolate Chip Skillet Cookie
Serves 2-3
INGREDIENTS
24 ounces cookie dough
8 ounces chocolate, broken up into chunks
Ice cream
Caramel sauce
PREPARATION
Preheat oven to 325°F/160°C.
Press ⅔ of the cookie dough into the bottom and up the sides of a small skillet or a small cake pan.
Place the chocolate chunks in the middle of the cookie dough, then place the other flattened ⅓ of the cookie dough on top.
Crimp the edges of the dough together to seal in the chocolate.
Bake for 35-40 minutes.
Serve warm with ice cream and caramel sauce!

Here is what you'll need!
SCALLOPED POTATOES
Servings: 2
INGREDIENTS
1 tablespoon butter
2 cloves garlic
1 tablespoon flour
1 cup milk
1 teaspoon salt
½ teaspoon pepper
3-4 Yukon gold potatoes, peeled
2 tablespoons grated parmesan
Chopped parsley, for garnish
PREPARATION
Preheat oven to 350°F/180°C.
In a small pot, melt the butter and fry the garlic until it’s just starting to brown.
Add the flour, and whisk until there are no lumps.
Slowly drizzle in the milk while constantly whisking to make sure the mixture is smooth.
Bring to a boil, then remove from heat.
Slice the potatoes into about ⅛-inch thick slices, then fan them out in a small baking dish.
Pour the sauce on top of the potatoes, then sprinkle with parmesan.
Bake for about 1 hour, until the top is bubbly and golden brown.
Sprinkle chopped parsley on top, then serve!
BACON AVOCADO CAESAR SALAD
Servings: 2
INGREDIENTS
1 head romaine lettuce
4 slices bacon, cooked and crumbled
1 avocado, diced
½ cup croutons
½ cup shaved parmesan cheese, plus extra for serving
¼ cup Caesar dressing
PREPARATION
Slice the lettuce into about 1-inch pieces, then transfer to a large salad bowl.
Add the bacon, avocado, croutons, cheese, and dressing, mixing until evenly combined.
Serve with additional parmesan on top!
GARLIC BUTTER STEAK
Servings: 2
INGREDIENTS
1 (2 inch thick) ribeye steak, preferably USDA Prime
Salt
Pepper
3 tablespoons canola oil
3 tablespoons butter
3 garlic cloves, peeled and smashed
2 sprigs fresh rosemary
3 sprigs fresh thyme
PREPARATION
Preheat oven to 200°F/95°C.
Generously season all sides of the steak with salt and pepper.
Transfer to a wire rack on top of a baking sheet, then bake for about 45 minutes to an hour until the internal temperature reads about 125°F for medium-rare. Adjust the bake time based on if you like your steak more rare or more well-done (you monster).
Heat the canola oil in a pan over high heat until smoking. Do not use olive oil, as its smoke point is significantly lower than that of canola oil and will smoke before reaching the desired cooking temperature.
Sear the steak for 30 seconds on the first side, then flip.
Add the butter, garlic, rosemary, and thyme and swirl around the pan. Transfer the garlic and herbs on top of the steak and baste the steak with the butter using a large spoon.
Baste for about 30 seconds, then flip and baste the other side for about 15 seconds.
Turn the steak on its side and cook to render off any excess fat.
Rest the steak on a cutting board or wire rack for about 10 minutes. Slicing the steak before the resting period has finished will result in a lot of the juices leaking out, which may not be desirable.
Slice the steak into ½ -nch strips, then fan out the slices and serve!

Here is the recipe!
Ingredients
4 small- medium sized tomatoes, chopped
1/2 medium red onion, chopped
1/2 red bell pepper, chopped
a handful of parsley, chopped
2 cloves of garlic, minced
1 tsp oregano
1 tsp sugar
filet sirloin (about 1 lb total for two)
olive oil
balsamic vinegar
salt & pepper
1/2 medium sized fennel
shaved parmasean
arugula
Prep (both):
Chop/ dice tomatoes, red onion, bell pepper, garlic and parsley.
(A)
Season two cuts of filet sirloin (or your favorite steak) with salt and pepper. Heat a cast iron skillet, and coat with olive oil before adding meat. Cook first side 3 - 5 minutes. Flip and cook another 3 - 5, mindful that both cuts might have unequal cook times depending on thickness. (Suggested times are for med- medium rare).
Set aside and toss about a 1/8 cup pine nuts into a small skillet. Cook until golden brown. Pass off to your cooking partner for the salad.
(B)
In a medium sauce pan, add a few tablespoons of olive oil, and your prepped vegetables. 4 small/med tomatoes, 1/2 red onion, 1/2 red bell pepper, 2 cloves of garlic, and a tablespoon of parsley. Add 1 tsp of oregano, and 1 tsp of sugar. Stir and simmer for 15 minutes, add salt and pepper to taste.
In a small bowl, mix 1/2 cup olive oil, and several splashes of balsamic vinegar, salt and pepper.
Slice up half a fennel. On a large plate, place arugula and top with sliced fennel. Coat with dressing, and top with shaved parmesan and toasted pine nuts.
Both:
Plate your steak and top with tomato sauce. Serve with salad and your favorite wine. Enjoy!

Dinner usually refers to the most significant and important meal of the day, which can be the noon or the evening meal. Turn on the Bright Lights
Turn On the Bright Lights is the debut studio album by the American rock band Interpol, released in August 2002. The album was recorded in November 2001 at Tarquin Studios in Connecticut, and was co-produced, mixed and engineered by Peter Katis and Gareth Jones. It was released on August 19, 2002 in the United Kingdom and August 20 in the United States, through independent record label Matador Records. Upon release, the record peaked at number 101 on the UK Albums Chart. It reached number 158 on the Billboard 200 in the United States, as well as spending 73 weeks in the Billboard Independent Albums, peaking at number five.
"PDA", "NYC", "Obstacle 1" and "Say Hello to the Angels" were the singles from Turn On the Bright Lights, and a video was shot for each with the exception of "Say Hello to the Angels".
The album was certified Gold by the RIAA on August 29, 2011 for shipments of 500,000 copies.
A remastered version of the album was released in 2012 to commemorate its tenth anniversary. It featured additional material including demo recordings of several tracks, the bonus songs previously available on international releases and a DVD of live performances and music videos.

Al Smith
Alfred Emanuel "Al" Smith (December 30, 1873 – October 4, 1944) was an American statesman who was elected Governor of New York four times and was the Democratic U.S. presidential candidate in 1928. He was the foremost urban leader of the efficiency-oriented Progressive Movement and was noted for achieving a wide range of reforms as governor in the 1920s. He was also linked to the notorious Tammany Hall machine that controlled New York City's politics; was a strong opponent of Prohibition and was the first Catholic nominee for President. His candidacy mobilized Catholic votes—especially women who previously had not voted. It also mobilized the anti-Catholic vote, which was strongest in the South.
As a committed "wet" (anti-Prohibition) candidate, Smith attracted not only drinkers but also voters angered by the corruption and lawlessness brought about by prohibition. However, he was feared among Protestants, including German Lutherans and Southern Baptists, who believed that the Catholic Church and the Pope would dictate his policies. Most importantly, this was a time of national prosperity under a Republican Presidency, and Smith lost in a landslide to Republican Herbert Hoover. Four years later Smith sought the 1932 nomination but was defeated by his former ally and successor as New York Governor Franklin D. Roosevelt. Smith entered business in New York City and became an increasingly vocal opponent of Roosevelt's New Deal.

Place mushrooms on a greased baking sheet and season with salt and pepper to taste. Bake for 10 minutes. Remove from oven and add toppings tomato sauce (or pesto), mozzarella and toppings of choice. Bake for another 10 minutes or until toppings are cooked through and cheese is melted. Garnish with fresh thyme and basil. *If using bacon or sausage, make sure meat is precooked before using as a topping! Enjoy! Chili Cheese Stuffed Zucchini 4 zucchini 1 lb ground beef 1 onion, finely diced 2 garlic cloves, minced 2 tbsp chili seasoning 1/2 tsp ground cumin 14oz can diced tomatoes 1/2 cup cheddar cheese 1/4 cup cilantro, chopped salt and pepper to taste For the zucchini, cut them in half lengthwise and scoop out the seeds using a spoon. Set aside. Arrange zucchini halves on a non-stick baking sheet and season with salt and pepper. Set aside. In a large saucepan, add ground beef and fry until cooked through. Add onion and zucchini seeds and cook for another 2 minutes. Add garlic, chili seasoning and cumin and cook for another minute. Add diced tomatoes and bring mixture to a boil. Reduce to a simmer and allow to cook until slightly thickened. Season with salt and pepper to taste. If you like a bit of heat, go ahead and add some chili flakes as well. Fill each zucchini with chili. Bake at 400ºF for 15-20 minutes. Top with cheddar cheese and broil for 2-3 minutes. Serve immediately with fresh cilantro or store in the refrigerator for up to 3 days. Taco Stuffed Peppers 3 bell peppers, cut in half and seeds removed (leave green stems on) 1 lb ground chicken 1 onion, finely diced 3 cloves garlic, minced 3/4 cup rice, cooked 1 cup black beans, rinsed and drained 1 cup corn, fresh or frozen 1 can diced tomatoes (14oz) 2 tbsp taco seasoning 1/2 cup cheddar cheese or Monterey jack, grated oil In a large saucepan, on medium-high heat, add oil. Add ground chicken and fry until cooked through. Add onion and cook for another 3 minutes. Add garlic and rice and cook for another minute. Add beans, corn, tomatoes and taco seasoning. Allow mixture to reduce and thicken slightly. Stuff peppers and place on a well greased baking dish. Top each pepper with cheese and bake at 350ºF for 15-20 minutes. Garnish with taco toppings of choice such as sour cream, cilantro and green onions. Enjoy! -

Here is what you'll need! Bacon Asparagus Pastry Twists Serves 2-3 INGREDIENTS 1 sheet puff pastry, thawed 6-8 slices bacon 12-15 asparagus spears 1 egg, beaten Salt Pepper PREPARATION Preheat oven to 400°F/200°C. Slice the puff pastry into 1-centimeter strips. Slice the bacon in half lengthwise into thin strips. Wrap a strip of bacon around an asparagus spear in a spiral. Wrap a strip of puff pastry around the asparagus, looping it in between the bacon spiral. Repeat with the rest of the asparagus. Place the wrapped spears on a baking tray lined with parchment paper. Brush them with egg wash, then sprinkle a pinch of salt & pepper on top. Bake for 18 minutes, until golden brown and puffed. Serve! Creamy Tuscan Chicken Serves 2-3 INGREDIENTS 4 chicken thighs, bone-in & skin-on 2 teaspoons salt (for the chicken) 1 teaspoon pepper (for the chicken) 1 tablespoon oil 3 cloves garlic, chopped ½ onion, diced 1 tomato, diced 2 cups spinach 2 cups heavy cream 1 teaspoon salt 1 teaspoon pepper ½ cup grated parmesan 2 tablespoons parsley, chopped PREPARATION Season the chicken with the salt & pepper, making sure to mix it in evenly. Heat oil in a skillet over medium-low heat. Place the chicken thighs skin side down in the skillet and cook for about 13 minutes in order to crisp up the skin. Move the chicken around from time to time to ensure it cooks evenly. The skin should be hard to the touch. Flip the chicken, then cook for about another 15 minutes until the chicken is fully cooked. Remove from pan. Add the garlic and onion, stirring until onions are translucent. Stir in the tomatoes and spinach until the spinach is wilted. Add the heavy cream, salt, and pepper, bringing to a boil. Add the parmesan cheese and parsley, stirring until the sauce has thickened slightly. Place the chicken back in the pan, spooning the sauce on top of the chicken. Serve! Chocolate Chip Skillet Cookie Serves 2-3 INGREDIENTS 24 ounces cookie dough 8 ounces chocolate, broken up into chunks Ice cream Caramel sauce PREPARATION Preheat oven to 325°F/160°C. Press ⅔ of the cookie dough into the bottom and up the sides of a small skillet or a small cake pan. Place the chocolate chunks in the middle of the cookie dough, then place the other flattened ⅓ of the cookie dough on top. Crimp the edges of the dough together to seal in the chocolate. SCALLOPED POTATOES Servings: 2 INGREDIENTS 1 tablespoon butter 2 cloves garlic 1 tablespoon flour 1 cup milk 1 teaspoon salt ½ teaspoon pepper 3-4 Yukon gold potatoes, peeled 2 tablespoons grated parmesan Chopped parsley, for garnish PREPARATION Preheat oven to 350°F/180°C. In a small pot, melt the butter and fry the garlic until it’s just starting to brown. Add the flour, and whisk until there are no lumps. Slowly drizzle in the milk while constantly whisking to make sure the mixture is smooth. Bring to a boil, then remove from heat. Slice the potatoes into about ⅛-inch thick slices, then fan them out in a small baking dish. Pour the sauce on top of the potatoes, then sprinkle with parmesan. Bake for about 1 hour, until the top is bubbly and golden brown. Sprinkle chopped parsley on top, then serve! BACON AVOCADO CAESAR SALAD Servings: 2 INGREDIENTS 1 head romaine lettuce 4 slices bacon, cooked and crumbled 1 avocado, diced ½ cup croutons ½ cup shaved parmesan cheese, plus extra for serving ¼ cup Caesar dressing PREPARATION Slice the lettuce into about 1-inch pieces, then transfer to a large salad bowl. Add the bacon, avocado, croutons, cheese, and dressing, mixing until evenly combined. Serve with additional parmesan on top! GARLIC BUTTER STEAK Servings: 2 INGREDIENTS 1 (2 inch thick) ribeye steak, preferably USDA Prime Salt Pepper 3 tablespoons canola oil 3 tablespoons butter 3 garlic cloves, peeled and smashed 2 sprigs fresh rosemary 3 sprigs fresh thyme PREPARATION Preheat oven to 200°F/95°C. Generously season all sides of the steak with salt and pepper. Transfer to a wire rack on top of a baking sheet, then bake for about 45 minutes to an hour until the internal temperature reads about 125°F for medium-rare. Adjust the bake time based on if you like your steak more rare or more well-done (you monster). Heat the canola oil in a pan over high heat until smoking. Do not use olive oil, as its smoke point is significantly lower than that of canola oil and will smoke before reaching the desired cooking temperature. Sear the steak for 30 seconds on the first side, then flip. Add the butter, garlic, rosemary, and thyme and swirl around the pan. Transfer the garlic and herbs on top of the steak and baste the steak with the butter using a large spoon. Baste for about 30 seconds, then flip and baste the other side for about 15 seconds. Turn the steak on its side and cook to render off any excess fat. Rest the steak on a cutting board or wire rack for about 10 minutes. Slicing the steak before the resting period has finished will result in a lot of the juices leaking out, which may not be desirable. Slice the steak into ½ -nch strips, then fan out the slices and serve! Here is the recipe! Ingredients 4 small- medium sized tomatoes, chopped 1/2 medium red onion, chopped 1/2 red bell pepper, chopped a handful of parsley, chopped 2 cloves of garlic, minced 1 tsp oregano 1 tsp sugar filet sirloin (about 1 lb total for two) olive oil balsamic vinegar salt & pepper 1/2 medium sized fennel shaved parmasean arugula Prep (both): Chop/ dice tomatoes, red onion, bell pepper, garlic and parsley. (A) Season two cuts of filet sirloin (or your favorite steak) with salt and pepper. Heat a cast iron skillet, and coat with olive oil before adding meat. Cook first side 3 - 5 minutes. Flip and cook another 3 - 5, mindful that both cuts might have unequal cook times depending on thickness. (Suggested times are for med- medium rare). Set aside and toss about a 1/8 cup pine nuts into a small skillet. Cook until golden brown. Pass off to your cooking partner for the salad. (B) In a medium sauce pan, add a few tablespoons of olive oil, and your prepped vegetables. 4 small/med tomatoes, 1/2 red onion, 1/2 red bell pepper, 2 cloves of garlic, and a tablespoon of parsley. Add 1 tsp of oregano, and 1 tsp of sugar. Stir and simmer for 15 minutes, add salt and pepper to taste. In a small bowl, mix 1/2 cup olive oil, and several splashes of balsamic vinegar, salt and pepper. Slice up half a fennel. On a large plate, place arugula and top with sliced fennel. Coat with dressing, and top with shaved parmesan and toasted pine nuts. Both: Plate your steak and top with tomato sauce. Serve with salad and your favorite wine. Enjoy! Plot: Episodic saga from the first half of the 20th century follows Hero Hua from an ill-omened June day in his youth to a showdown 17 years later with a disaffected member of his martial-arts school, a Japanese named Invincible. Tensions between Chinese and Japanese, plus U.S. racism, mark the tale. Hero marries Jade, leaves her in China when he goes to America as an indentured servant, rebels against cruel labor conditions, and is joined by her in New York City where she has twins. Jump ahead 16 years: their son Sword comes to New York looking for his father. There, Sword hears many stories of his father, which we see in flashbacks, and the stage is set for the battle with Invincible.

Here is what you'll need! Bacon Asparagus Pastry Twists Serves 2-3 INGREDIENTS 1 sheet puff pastry, thawed 6-8 slices bacon 12-15 asparagus spears 1 egg, beaten Salt Pepper PREPARATION Preheat oven to 400°F/200°C. Slice the puff pastry into 1-centimeter strips. Slice the bacon in half lengthwise into thin strips. Wrap a strip of bacon around an asparagus spear in a spiral. Wrap a strip of puff pastry around the asparagus, looping it in between the bacon spiral. Repeat with the rest of the asparagus. Place the wrapped spears on a baking tray lined with parchment paper. Mini Portobello Margarita Pizzas
6 portobello mushrooms, stems removed
1/2 cup tomato sauce or pesto
1 cup mozzarella, shredded
fresh thyme
basil for garnish
toppings of choice (olives, pepperoni, onions, tomatoes, pepperoni, hot peppers, bacon…)
oil
salt and pepper to taste
Preheat oven to 375ºF.
Place mushrooms on a greased baking sheet and season with salt and pepper to taste. Bake for 10 minutes.
Remove from oven and add toppings tomato sauce (or pesto), mozzarella and toppings of choice.
Bake for another 10 minutes or until toppings are cooked through and cheese is melted. Garnish with fresh thyme and basil.
*If using bacon or sausage, make sure meat is precooked before using as a topping!
Enjoy!
Chili Cheese Stuffed Zucchini
4 zucchini
1 lb ground beef
1 onion, finely diced
2 garlic cloves, minced
2 tbsp chili seasoning
1/2 tsp ground cumin
14oz can diced tomatoes
1/2 cup cheddar cheese
1/4 cup cilantro, chopped
salt and pepper to taste
For the zucchini, cut them in half lengthwise and scoop out the seeds using a spoon. Set aside. Arrange zucchini halves on a non-stick baking sheet and season with salt and pepper. Set aside.
In a large saucepan, add ground beef and fry until cooked through. Add onion and zucchini seeds and cook for another 2 minutes. Add garlic, chili seasoning and cumin and cook for another minute. Add diced tomatoes and bring mixture to a boil. Reduce to a simmer and allow to cook until slightly thickened. Season with salt and pepper to taste. If you like a bit of heat, go ahead and add some chili flakes as well.
Fill each zucchini with chili. Bake at 400ºF for 15-20 minutes. Top with cheddar cheese and broil for 2-3 minutes.
Serve immediately with fresh cilantro or store in the refrigerator for up to 3 days.
Enjoy!
Taco Stuffed Peppers
3 bell peppers, cut in half and seeds removed (leave green stems on)
1 lb ground chicken
1 onion, finely diced
3 cloves garlic, minced
3/4 cup rice, cooked
1 cup black beans, rinsed and drained
1 cup corn, fresh or frozen
1 can diced tomatoes (14oz)
2 tbsp taco seasoning
1/2 cup cheddar cheese or Monterey jack, grated
oil
In a large saucepan, on medium-high heat, add oil. Add ground chicken and fry until cooked through. Add onion and cook for another 3 minutes. Add garlic and rice and cook for another minute. Add beans, corn, tomatoes and taco seasoning. Allow mixture to reduce and thicken slightly.
Stuff peppers and place on a well greased baking dish.
Top each pepper with cheese and bake at 350ºF for 15-20 minutes.
Garnish with taco toppings of choice such as sour cream, cilantro and green onions.

3 cloves garlic, minced
3/4 cup rice, cooked
1 cup black beans, rinsed and drained
1 cup corn, fresh or frozen
1 can diced tomatoes (14oz)
2 tbsp taco seasoning
1/2 cup cheddar cheese or Monterey jack, grated
oil
In a large saucepan, on medium-high heat, add oil. Add ground chicken and fry until cooked through. Add onion and cook for another 3 minutes. Add garlic and rice and cook for another minute. Add beans, corn, tomatoes and taco seasoning. Allow mixture to reduce and thicken slightly.
Stuff peppers and place on a well greased baking dish.
Top each pepper with cheese and bake at 350ºF for 15-20 minutes.
Garnish with taco toppings of choice such as sour cream, cilantro and green onions.

Bacon Asparagus Pastry Twists
Serves 2-3
INGREDIENTS
1 sheet puff pastry, thawed
6-8 slices bacon
12-15 asparagus spears
1 egg, beaten
Salt
Pepper
PREPARATION
Preheat oven to 400°F/200°C.
Slice the puff pastry into 1-centimeter strips.
Slice the bacon in half lengthwise into thin strips.
Wrap a strip of bacon around an asparagus spear in a spiral.
Wrap a strip of puff pastry around the asparagus, looping it in between the bacon spiral.
Repeat with the rest of the asparagus.
Place the wrapped spears on a baking tray lined with parchment paper.
Brush them with egg wash, then sprinkle a pinch of salt & pepper on top.
Bake for 18 minutes, until golden brown and puffed.
Serve!
Creamy Tuscan Chicken
Serves 2-3
INGREDIENTS
4 chicken thighs, bone-in & skin-on
2 teaspoons salt (for the chicken)
1 teaspoon pepper (for the chicken)
1 tablespoon oil
3 cloves garlic, chopped

1 tomato, diced
2 cups spinach
2 cups heavy cream
1 teaspoon salt
1 teaspoon pepper
½ cup grated parmesan
2 tablespoons parsley, chopped
PREPARATION
Season the chicken with the salt & pepper, making sure to mix it in evenly.
Heat oil in a skillet over medium-low heat.
Place the chicken thighs skin side down in the skillet and cook for about 13 minutes in order to crisp up the skin. Move the chicken around from time to time to ensure it cooks evenly. The skin should be hard to the touch.
Flip the chicken, then cook for about another 15 minutes until the chicken is fully cooked. Remove from pan.
Add the garlic and onion, stirring until onions are translucent. Stir in the tomatoes and spinach until the spinach is wilted.
Add the heavy cream, salt, and pepper, bringing to a boil.
Add the parmesan cheese and parsley, stirring until the sauce has thickened slightly.
Place the chicken back in the pan, spooning the sauce on top of the chicken.
Serve!
Chocolate Chip Skillet Cookie
Serves 2-3
INGREDIENTS
24 ounces cookie dough
8 ounces chocolate, broken up into chunks
Ice cream
Caramel sauce
PREPARATION
Preheat oven to 325°F/160°C.
Press ⅔ of the cookie dough into the bottom and up the sides of a small skillet or a small cake pan.
Place the chocolate chunks in the middle of the cookie dough, then place the other flattened ⅓ of the cookie dough on top.
Crimp the edges of the dough together to seal in the chocolate.
Bake for 35-40 minutes.
Serve warm with ice cream and caramel sauce!

1 tablespoon flour
1 cup milk
1 teaspoon salt
½ teaspoon pepper
3-4 Yukon gold potatoes, peeled
2 tablespoons grated parmesan
Chopped parsley, for garnish
PREPARATION
Preheat oven to 350°F/180°C.
In a small pot, melt the butter and fry the garlic until it’s just starting to brown.
Add the flour, and whisk until there are no lumps.
Slowly drizzle in the milk while constantly whisking to make sure the mixture is smooth.
Bring to a boil, then remove from heat.
Slice the potatoes into about ⅛-inch thick slices, then fan them out in a small baking dish.
Pour the sauce on top of the potatoes, then sprinkle with parmesan.
Bake for about 1 hour, until the top is bubbly and golden brown.
Sprinkle chopped parsley on top, then serve!
BACON AVOCADO CAESAR SALAD
Servings: 2
INGREDIENTS
1 head romaine lettuce
4 slices bacon, cooked and crumbled
1 avocado, diced
½ cup croutons
½ cup shaved parmesan cheese, plus extra for serving
¼ cup Caesar dressing
PREPARATION
Slice the lettuce into about 1-inch pieces, then transfer to a large salad bowl.
Add the bacon, avocado, croutons, cheese, and dressing, mixing until evenly combined.
Serve with additional parmesan on top!
GARLIC BUTTER STEAK
Servings: 2
INGREDIENTS
1 (2 inch thick) ribeye steak, preferably USDA Prime
Salt
Pepper
3 tablespoons canola oil
3 tablespoons butter
3 garlic cloves, peeled and smashed
2 sprigs fresh rosemary
3 sprigs fresh thyme
PREPARATION
Preheat oven to 200°F/95°C.
Generously season all sides of the steak with salt and pepper.
Transfer to a wire rack on top of a baking sheet, then bake for about 45 minutes to an hour until the internal temperature reads about 125°F for medium-rare. Adjust the bake time based on if you like your steak more rare or more well-done (you monster).
Heat the canola oil in a pan over high heat until smoking. Do not use olive oil, as its smoke point is significantly lower than that of canola oil and will smoke before reaching the desired cooking temperature.
Sear the steak for 30 seconds on the first side, then flip.
Add the butter, garlic, rosemary, and thyme and swirl around the pan. Transfer the garlic and herbs on top of the steak and baste the steak with the butter using a large spoon.
Baste for about 30 seconds, then flip and baste the other side for about 15 seconds.
Turn the steak on its side and cook to render off any excess fat.
Rest the steak on a cutting board or wire rack for about 10 minutes. Slicing the steak before the resting period has finished will result in a lot of the juices leaking out, which may not be desirable.
Slice the steak into ½ -nch strips, then fan out the slices and serve!

filet sirloin (about 1 lb total for two)
olive oil
balsamic vinegar
salt & pepper
1/2 medium sized fennel
shaved parmasean
arugula
Prep (both):
Chop/ dice tomatoes, red onion, bell pepper, garlic and parsley.
(A)
Season two cuts of filet sirloin (or your favorite steak) with salt and pepper. Heat a cast iron skillet, and coat with olive oil before adding meat. Cook first side 3 - 5 minutes. Flip and cook another 3 - 5, mindful that both cuts might have unequal cook times depending on thickness. (Suggested times are for med- medium rare).
Set aside and toss about a 1/8 cup pine nuts into a small skillet. Cook until golden brown. Pass off to your cooking partner for the salad.
(B)
In a medium sauce pan, add a few tablespoons of olive oil, and your prepped vegetables. 4 small/med tomatoes, 1/2 red onion, 1/2 red bell pepper, 2 cloves of garlic, and a tablespoon of parsley. Add 1 tsp of oregano, and 1 tsp of sugar. Stir and simmer for 15 minutes, add salt and pepper to taste.
In a small bowl, mix 1/2 cup olive oil, and several splashes of balsamic vinegar, salt and pepper.
Slice up half a fennel. On a large plate, place arugula and top with sliced fennel. Coat with dressing, and top with shaved parmesan and toasted pine nuts.
Both:
Plate your steak and top with tomato sauce. Serve with salad and your favorite wine. Enjoy!
