Healthy lunchbox: make this instead of the store-bought variety

Ingredients

5 tbsp hulled tahini

4 tbsp honey (or rice malt syrup)

½ tsp concentrated natural vanilla extract

pinch of salt

¾ cup desiccated coconut

2 cups puffed rice

Optional: 50g dark chocolate (70 per cent cacao)

Optional: ¼ cup goji berries

Method

1. Place the tahini, honey, vanilla and salt into a mixing bowl and stir until well combined. Add the coconut and mix to combine. Add the puffed rice and use slightly damp hands, or hands rubbed with coconut oil, to combine the mixture.

2. Once it is well combined, press it very firmly into a lightly greased and lined 20-centimetre square tin and press firmly into place with the back of a spoon. Place in the fridge overnight to set.

3. Cut into bars and place onto a wire rack, drizzle with melted chocolate and sprinkle with goji berries.

4. Return to the refrigerator for 10 minutes or until chocolate is set.
