A bilingual country in which Spanish and the native tongue Guaraní are spoken, Paraguay is home to both European and indigenous culinary influences. Cassava and corn are two staple foods in the Paraguayan diet. The tuber and grain are eaten in various forms, and often converted into flour for cooking. A classic example of Paraguayan gastronomy is this recipe for chicken soup with dumplings made from ricotta, cornmeal flour and semolina. Another popular meal is sopa Paraguaya. While the name literally translates as "Paraguayan soup", this dish is actually a spongy cornbread that's delicious eaten on it's own or served as a side.
