This easy grilled chicken shawarma recipe is bursting with Middle Eastern flavours. Served on an Israeli-style mixed bean salad.

Ingredients

2 x 180g Australian free-range chicken breasts

1 tbsp shish tawook or shawarma spice

1 tin mixed beans

1 lemon

2 spring onions

2 sprigs parsley

1 lebanese cucumber

2 tomatoes

Method

Marinate chicken

In a bowl combine chicken with shish tawook or shawarma spice, a drizzle of olive oil, salt and pepper.

Grill chicken

Heat a large non-stick fry pan, BBQ or grill pan to a medium to high heat. Cook each chicken breast for eight minutes, turning every two minutes. Remove from the heat, cover with foil and rest for a further two minutes.

Make salad

Finely dice the tomatoes and cucumber. Finely chop the parsley. Drain and rinse the beans. Finely slice the spring onions. Combine in a bowl with juice of half the lemon, olive oil, salt and pepper.

To serve spoon salad onto plates. Slice chicken and arrange on top. Finish with a squeeze of lemon.
