Fried chicken

Fried chicken (also referred to as Southern fried chicken) is a dish consisting of chicken pieces usually from broiler chickens which have been floured or battered and then pan-fried, deep fried, or pressure fried. The breading adds a crisp coating or crust to the exterior. What separates fried chicken from other fried forms of chicken is that generally the chicken is cut at the joints and the bones and skin are left intact. Crisp well-seasoned skin, rendered of excess fat, is a hallmark of well made fried chicken.

Preparation

Generally, chickens are not fried whole; instead, the chicken is divided into its constituent pieces. The two white meat sections are the breast and the wing from the front of the chicken, while the dark meat sections are the thigh and leg or "drumstick", are from the rear of the chicken. These pieces are usually subdivided into the wings, the breasts (the wishbone is often cut out first in home cooking), the legs, and the thighs. The ribs are sometimes left on the breast, but commercially they and the back are usually discarded. To prepare the chicken pieces for frying, they are dredged in flour or a similar dry substance (possibly following marination or dipping in milk or buttermilk) to coat the meat and to develop a crust. Seasonings such as salt, pepper, cayenne pepper, paprika, garlic powder, onion powder, or ranch dressing mix can be mixed in with the flour. As the pieces of chicken cook, some of the moisture that exudes from the chicken is absorbed by the coating of flour and browns along with the flour, creating a flavorful crust. Traditionally, lard is used to fry the chicken, but corn oil, peanut oil, canola oil, or vegetable oil are also frequently used. The flavor of olive oil is generally considered too strong to be used for traditional fried chicken, and its low smoke point makes it unsuitable for use.

Southern Fried Records

Southern Fried Records is a London-based independent electronic dance music record label founded and owned by Norman Cook, better known by his stage name, Fatboy Slim. The label was created by Cook in 1994 to publish and market his and other artists' releases that major labels would deem not commercial enough for mass release.

The label's roster has featured scene leaders such as Cook himself (often under his Mighty Dub Katz pseudonym, among others), as well as electro funk pioneer Kurtis Mantronik. Currently, the label has expanded its range of releases to include more album-based artists alongside club music producers, including Callum McDonald, Armand Van Helden, DJ Touche, Cagedbaby, The Black Ghosts, The Whip, Crookers, The Shoes, The 2 Bears, Kashii, Music For The Deaf and The BPA (AKA The Brighton Port Authority)

Killer Mike

Michael Render (born April 20, 1975), better known by his stage name Killer Mike, is an American hip hop recording artist, activist, and occasional actor from Atlanta, Georgia. He is the founder of Grind Time Official Records, which he launched through the SMC and Fontana Distribution. Mike made his debut on "Snappin' and Trappin'", from OutKast's 2000 LP Stankonia, and later appeared on the Grammy-winning song "The Whole World", a single from OutKast's greatest hits album Big Boi and Dre Present...OutKast.

In December 2008, Mike confirmed he signed to fellow Atlanta-based rapper T.I.'s Grand Hustle Records. In 2012, he released R.A.P. Music, produced entirely by American rapper-producer El-P. In 2013, the two subsequently formed a duo, branding themselves Run the Jewels. The two signed to Fool's Gold Records and released their self-titled debut in June of that year.

Career

In the mid-'90s, Killer Mike briefly attended Morehouse College, where he met producers The Beat Bullies and eventually Big Boi of OutKast. His music debut was a feature appearance on OutKast's "Snappin' & Trappin'" from the 2000 album Stankonia, followed by their 2001 single "The Whole World", which won the 2003 Grammy Award for Best Rap Performance by a Duo or Group. He was also featured on several other tracks that year, including "Poppin' Tags" from Jay-Z's The Blueprint 2.

Pork chop

A pork chop is a chop of pork (a meat chop) cut perpendicularly to the spine of the pig and usually containing a rib or part of a vertebra, served as an individual portion.

Variations

The center cut or pork loin chop includes a large T, juicy shaped bone, and is structurally similar to the beef T-bone steak. Rib chops come from the rib portion of the loin, and are similar to rib eye steaks. Blade or shoulder chops come from the spine, and tend to contain much connective tissue. The sirloin chop is taken from the (rear) leg end and also contains much connective tissue. The so-called "Iowa Chop" is a thick center cut; the term was coined in 1976 by the Iowa Pork Producers Association. A "Bacon Chop" is cut from the shoulder end and leaves the pork belly meat attached.Pork chops are sometimes sold marinated to add flavour; marinades such as a chilli sauce or a barbecue sauce are common. As pork is often cooked more thoroughly than beef, thus running the risk of drying out the meat, pork chops can be brined to maintain moistness. In addition one could also wrap their pork chops in bacon to add further moistness during the cooking process.
