Spicy beef with udon noodles and Asian greens recipe

Looking for an Asian fix? Whip up this healthy and super quick meal in just 20 minutes. Combining premium lean beef mince, a scrumptious Asian sauce mix, Chinese broccoli and udon noodles... Make it as spicy as you like.

Ingredients

300g premium beef mince

2 garlic cloves

1 spring onion

1 birds eye chilli

2cm ginger

1 spring onion

1 tbsp rice wine vinegar

1 tbsp soy sauce

1 tbsp oyster sauce

½ bunch Chinese broccoli

1 large portobello mushroom

440g udon noodles (two packets)

Method

Prepare vegetables

Deseed the chilli and finely chop along with the garlic. Grate the ginger. Cut Chinese broccoli into four even lengths. Half and then finely slice the mushroom. Finely slice spring onion.

Prepare noodles

Fill kettle with water and bring to the boil. Place noodles in a heatproof dish, cover with boiling water and soak for three to five minutes. Use tongs to separate noodles then drain.

Cook mince

Heat a drizzle of olive oil in a wok or non-stick fry pan to a medium heat. Stir-fry the chilli, garlic and ginger for 20 seconds. Add the mince and stir-fry until it is almost cooked through, breaking up any lumps as it cooks. Add the mushroom slices and stir-fry for a further two to three minutes. Add the rice wine vinegar, soy sauce, oyster sauce and Chinese broccoli. Cook until wilted. Remove from heat.

To serve portion noodles evenly into bowls and top with the mince, vegetables and leftover juices from the pan. Garnish with spring onions.
