Middle Eastern lamb filo parcels recipe and cucumber and tomato salad

To make these Middle Eastern-inspired parcels combine spices, lamb mince, baby spinach and crumbled feta cheese to create a delicious filling. Wrapped in filo pastry, baked until golden and served with a refreshing cucumber and tomato salad.

Ingredients

350g premium lamb mince

75g baby spinach

75g feta

8 sheets filo pastry

1 tomato

1 lemon

1 cucumber

Spice mix

1 tsp ground cumin

½ tsp cinnamon

½ tsp sumac

Method

Preheat oven and cook lamb

Preheat oven to 180C. Heat a large non-stick fry pan on a medium to high heat with a drizzle of olive oil. Add the lamb mince and break up with a spoon as it browns. Season with pepper and add the spice mix. Combine well. Remove from heat. Stir through spinach and crumbled feta.

Make filo parcels

Take four sheets of filo pastry to make each parcel. Arrange the layers in a star shape, spraying or brushing olive oil between each layer. Divide mixture in half to make one parcel per person. Working in a circle, bring edges of filo into the centre to create a money bag. Pinch tight around the neck to seal. Spray or brush generously with olive oil. Repeat for remaining parcel.

Cook parcels

Line a baking tray. Using a spatula, gently transfer the parcels to the tray. Place on middle rack of oven and cook for 10 to 12 minutes until golden.

Make salad

Roughly chop tomato and cucumber. Squeeze over juice of the lemon. Drizzle with olive oil and season with salt and pepper. Combine well.

To serve gently plate parcels with salad.
