Make Sunday morning breakfasts a treat with homemade pancakes. Here’s how to whip up a batch in no time.
Step 1
Sift two cups of self raising flour, a 1/4 teaspoon of bicarb soda and 1/3 cup caster sugar together in a large bowl. Don’t leave out the bicarb soda as it gives the pancake a lighter fluffier texture. Sifting the flour and bicarb soda together aerates the mixture and ensures the bicarb soda is mixed through properly.
Step 2
Make a well in the centre.

Whisk one and a half cups of milk, one egg, and vanilla extract together in a jug. Whisking the egg with the milk before adding to the flour ensures they are mixed through properly.
Step 4
Add the egg mixture to the flour mixture and using a balloon whisk, stir until a smooth batter forms.
Step 5
If you would like to make chocolate pancakes, sprinkle choc chips into the batter.
Step 6
Cover with plastic wrap and set aside for 30 minutes to rest. This will relax the flour and soften the mixture.
Step 7
Melt a little butter in a non-stick frying pan over medium-high heat. Spoon ¼ cup of batter into the pan to make a 10cm diameter pancake. Reduce heat to medium-low and cook for 2 minutes or until little bubbles have risen to the surface of the pancake, and the pancake is golden underneath. Use a metal spatula to flip the pancake. Cook for a further 1 minute or until golden underneath.
Step 8
Transfer pancake to a warm plate and loosely cover with foil to keep warm. Place in a warm oven. Repeat with remaining batter, greasing the pan between each batch.
Step 9
Serve with berries and maple syrup.
