Make pasta carbonara
You'll never leave the table feeling hungry after eating this fettuccine carbonara.
This winter indulgence is a favourite amongst many.
Step 1
Cook 375g of fresh fettuccine or pasta of your choice, in a large saucepan of salted boiling water until al dente.
Step 2
While the pasta is cooking, heat a medium frying pan over high heat. Add 100g coarsely chopped pancetta and cook, stirring occasionally with a wooden spoon, for 2-3 minutes or until just crisp. Remove the pan from the heat.
Step 3
Whisk 2 eggs, 2 egg yolks then stir in ½ cup finely grated parmesan and ½ cup thickened cream in a medium bowl with a fork until well combined. Season with salt and pepper.
Step 4
Drain the pasta well, then return it to the pan. Add the pancetta and pour over the egg mixture. Gently toss until just combined (the heat of the pasta should cook the eggs; do not overcook).
Step 5
Divide the fettucine carbonara evenly among serving bowls. Top with shaved parmesan and serve immediately with mixed salad leaves, if desired.
