Glazed Gingerbread Donuts

Ingredients:

For the donuts:
1 cup flour of your choice
1 tsp baking powder
1 tsp ground cinnamon
1 tsp ground ginger
Pinch of allspice
Pinch of cloves
Pinch of salt
¼ cup rice malt syrup
1 egg
¾ cup milk
2 tbsp butter, melted 

For the glaze:
3 tbsp maple syrup
1 tsp ground ginger

Method:

Step 1:
Preheat your oven to 180°C, or preheat your donut cooker. To make the donuts, stir together all the dry ingredients and then whisk together all the wet ones.

Step 2:
Combine the wet and dry ingredients, grease the donut maker or tray with butter and pop them in to cook. They'll need about 10 minutes in the oven and less in your donut cooker.

Step 3:
Meanwhile, whisk the ground ginger with the maple syrup and pop it in a bowl, ready to dunk the hot donuts in to glaze them when they come out of the oven. Allow the donuts to dry on a cooling rack or tuck in straight away – they're lovely warm.

Serving suggestions:

These donuts are best the day of baking so enjoy them then. You can also store the batter in the fridge and make them up fresh when you're ready to eat them.

Gluten-free option: Use GF flour or buckwheat flour, 1:1

Dairy-free option: Replace the butter with coconut oil and use a nut or rice milk instead of the dairy option, 1:1

Egg-free option: Replace with 1 chia egg
