White peach bellini cocktails

Here' s a simple, seasonal and refreshing idea to get your romantic night or summer party started.

Ingredients

1 chilled medium white peach, peeled and diced

300ml prosecco, chilled

Method

Using a mortar and pestle, gently crush the peach until it becomes a purée. Place in fridge to chill, along with two champagne glasses.

Place peach purée and prosecco in a metal cocktail shaker. Stir to combine, but do not shake. Pour into chilled glasses and serve immediately.

Serve with Neil Perry's lobster sandwiches.
