In Sao Miquel, we were treated to cozida cooked in the early morning by locals and restaurants in hot volcanic soil known as fumaroles at Lago das Furnas via geothermal heat (be warned of the overpowering sulfur smell!) This hearty one-pot meal consists of boiled kale and cabbage, chorizo, black pudding, beef shoulder, chicken, carrot, yam, potatoes and pork; it’s the most perfect filling meal -- without the guilt ... Wine ... Cheese....
