Opposition leader Tim Nicholls shares his favourite Christmas recipe
By Felicity Caldwell
On the second day of Brisbane Times' political Christmas recipes series, we bring you a festive favourite from Opposition Leader Tim Nicholls.
The Nicholls household will be whipping up batches of Nuts and Bolts this year.
Yesterday, Premier Annastacia Palaszczuk shared the recipe for her family's Queensland fruit cake.
We'll be bringing you more festive treats from Queensland's MPs this week - and there are plenty of cooking enthusiasts, offering up everything from scones, lasagne, salads and sweet treats.
But first, over to Mr Nicholls.
"One of our family's favourite Christmas treats is Nuts and Bolts. We always make up a few batches to last over Christmas.
Everyone in the Nicholls family loves them – they're sweet, spicy and crunchy. We can't keep up with the orders from family and friends!
The aroma fills the house for hours. Definitely one of the sights and smells of Christmas at chez Nicholls.
My personal tasting notes say: "great with an ice cold XXXX Gold or a chilled white wine about fiveish".
And as Jimmy Buffet sings, "It's 5 o'clock somewhere!"
Enjoy, and Merry Christmas from the Nicholls family."
Nuts and Bolts
INGREDIENTS
300g Nutri-Grain
500g salted mixed nuts
Packet of soya crisps (you can also add pretzels but you need the soya crisps!)
One third cup of vegetable oil
Half a cup of Worcestershire sauce
1 & 1/2 teaspoons garlic salt
2 teaspoons curry powder
1 teaspoon turmeric
1 teaspoon cumin
1 teaspoon coriander
1 teaspoon cardamom (dried)
METHOD
1. In a slow oven 140c fan-forced or 160c or an electric frying pan, add the Nutri-Grain, mixed nuts, soya crisps (and pretzels if you want them).
2. Put Worcestershire sauce in a jar, add spices and shake up. Pour mixture over nuts, Nutri-Grain and soya (pretzel) mix. Turn mix to coat thoroughly. Then pour oil over mix and coat thoroughly as well.
3. Cook slowly for about an hour, turning them regularly. Make sure the mixture doesn't burn.
4. Once thoroughly cooked through remove from heat. Allow to cool and store in an airtight container.
5. Enjoy any time over the Christmas holidays!
