Street food is ready-to-eat food or drink sold by a hawker, or vendor, in a street or other public place, such as at a market or fair. It is often sold from a portable food booth,food cart, or food truck and meant for immediate consumption. Some street foods are regional, but many have spread beyond their region of origin. Most street foods are classed as both finger food and fast food, and are cheaper on average than restaurant meals. According to a 2007 study from the Food and Agriculture Organization, 2.5 billion people eat street food every day.
Today, people may purchase street food for a number of reasons, such as to get flavorful food for a reasonable price in a sociable setting, to experience ethnic cuisines, or for nostalgia.
Small fried fish were a street food in ancient Greece, however, Theophrastus held the custom of street food in low regard. Evidence of a large number of street food vendors were discovered during the excavation of Pompeii. Street food was widely consumed by poor urban residents of ancient Rome whose tenement homes did not have ovens or hearths. Here, chickpea soup with bread and grain paste were common meals. In ancient China, street food generally catered to the poor, however, wealthy residents would send servants to buy street food and bring it back for them to eat in their homes.
Sichuan (Chinese: 四川; pinyin: Sìchuān, formerly Szechwan or Szechuan) is a province in southwest China. The capital is Chengdu, a key economic centre of Western China.
The name of the province is an abbreviation of Sì Chuānlù (四川路), or "Four circuits of rivers", which is itself abbreviated from Chuānxiá Sìlù (川峡四路), or "Four circuits of rivers and gorges", named after the division of the existing circuit into four during the Northern Song dynasty.
Throughout its prehistory and early history, the region and its vicinity in the Yangtze region was the cradle of unique local civilizations which can be dated back to at least the 15th century BC and coinciding with the later years of the Shang and Zhou dynasties in North China. Sichuan was referred to in ancient Chinese sources as Ba-Shu (巴蜀), an abbreviation of the kingdoms of Ba and Shu which existed within the Sichuan Basin. Ba included Chongqing and the land in eastern Sichuan along the Yangtze and some tributary streams, while Shu included today's Chengdu, its surrounding plain and adjacent territories in western Sichuan.
Chinese cuisine includes styles originating from the diverse regions of China, as well as from Chinese people in other parts of the world including most Asia nations. The history of Chinese cuisine in China stretches back for thousands of years and has changed from period to period and in each region according to climate, imperial fashions, and local preferences. Over time, techniques and ingredients from the cuisines of other cultures were integrated into the cuisine of the Chinese people due both to imperial expansion and from the trade with nearby regions in pre-modern times, and from Europe and the New World in the modern period. In addition, dairy is rarely—if ever—used in any recipes in the style.
The "Eight Culinary Cuisines" of China are Anhui, Cantonese, Fujian, Hunan, Jiangsu, Shandong, Sichuan, and Zhejiang cuisines.
The staple foods of Chinese cooking include rice, noodles, vegetables, and sauces and seasonings.
Chinese society greatly valued gastronomy and developed an extensive study of the subject based on its traditional medical beliefs. Chinese culture initially centered around the North China Plain. The first domesticated crops seem to have been the foxtail and broomcorn varieties of millet, while rice was cultivated in the south. By 2000 BC, wheat had arrived from western Asia. However, these grains were typically served as warm noodle soups instead of baked into bread as in Europe. Nobles hunted various wild game and consumed mutton, pork, dog, and beef as these animals were domesticated. Grain was stored against famine and flood and meat was preserved with salt, vinegar, curing, and fermenting. The flavor of the meat was enhanced by cooking it in the fat of a different animal.

In Sichuan province, there is a large variety of different noodles to try. One of my favourite, even more so than the internationally famous Dan Dan noodles (dan dan mian 担担面) is the mixed sauce noodles with cowpeas, the jiangdoumian 豇豆面, they are top notch. Some of them are like Chinese street food, while others are in restaurants. Most of them are good.
