Learn how to make Sheer Khurma at home, sweet dessert recipe by Anushruti.
Sheer Khurma literally means "milk with dates" it is prepared during festive occasions. So go ahead and make sweet and creamy Sheer Khurma at home with the help of Anushruti only on Rajshri Food.
Ingredients:
- 2 tbsp of ghee
- 2 tbsp of raisins
- 10-12 deseeded black dates
- 20 pieces of cashew
- 20 pieces of almonds
- 20 pieces of pistachios
- few charoli nuts
- 1 cup or 125 gms of sevaiya
- 2 litre of 8 cups of organic cow milk
- 1 cup or 120 gms of sugar
- powder of 8 cardamom pods
- rose petals
Method:
- Heat some ghee and once it melts add raisins and once they are cooked take them out and keep them aside.
- Add deseeded dates and once they are cooked, keep them aside.
- Add blanched and peeled cashew, almonds and pistachios and blanched and peeled charoli nuts, once they are cooked take them off and keep them aside.
- In the same ghee add sevaiya and roast them on low heat until they change colour.
- Then add cow milk to it and let it come to boil.
- Turn down the heat and add the fried raisins, fried dates, fried nuts and sevaiya.
- Cook for 15-20 minutes until it becomes thick and creamy, then add sugar to it and cook again for 4-5 minutes.
- Add cardamom powder and stir properly.
- Garnish it with dry fruits and rose petals.
- Sheer Kurma is ready to be served.

Hyderabadi Sheer Khorma from Maimoona Yasmeen's Recipes
Ingredients:
Balai wala doodh (Full fat milk) : 2 litres
Shakar (Sugar): 120 grams (nearly 1 teacup)
Seviyan (Vermicelli ) : 35 grams or 3/4th teacup
Asli ghee (Clarified butter): 3 ½ tablespoons
Kaju (Cashews): 20 grams or handful
Badaam (Almonds): 20 grams or handful
Pista (Pistachios): 15 grams or handful
Sukhe khajoor (Dry dates): 5 whole
Chironji (Charoli) : 15 grams or handful
Procedure:
1. Kaju, badam, piste, khajoor aur chironji ko separate cups mein raat bhar bheegne ke liye rakh dijiye. (Aap yeh saare mewe ek ek mutthi bhi le sakte hain).
2. Agli subah kaju ko bareek kaat lijiye, badam aur piston ke chhilke alag karke inhe bhi kaat lijiye, khajoor ke beej nikal kar aadhe kaat lijiye aur chirounji saaf kar lijiye. Yeh sab mewe ek jagah kar lijiye.
3. Doodh ko ubaal aane dijiye aur hilate rahiye. Chalees minute (40 min) tak darmiyani aanch par pakaiyye key yeh doodh sava litre (1.25 litre) ho jaye.
4. Doosre saucepan mein teen tablespoon asli ghee daliye aur kate hue qushk mewon ko badaami rang ke hone tak tal lijiye aur nikal lijiye aur inhe sajane ke liye rakh lijiye. Bache hue mewe aap agle istemaal ke liye refrigerator mein rakh sakte hai.
5. Bache hue ghee mein aadha tablespoon aur ghee daliye. Seviyan crush karke daliye. Badami rang ke hone tak inhe tal lijiye.
6. Uble hue doodh ko fauri is mein daliye. Paanch minute (5 min) tak pakaiyye ke sewiyan gal jaayein.
7. Is mein shakar (sugar) daliye. Das minute (10 min) tak pakaiyye ke shakar is mein achhi tarah se ghul jaaye aur iski kachhi bu ya raw smell door ho jaaye. Aanch band kar dijiye.
8. Bowl mein nikalkar tale hue sukhe mewon aur zafraan ke kadiyon se sajaiyye.
Hyderabadi Sheer khorma tayyar hai.

Sheer Khurma literally means "milk with dates" it is prepared during festive occasions. So go ahead and make sweet and creamy Sheer Khurma at home with the help of Anushruti only on Rajshri Food.
Ingredients:
- 2 tbsp of ghee
- 2 tbsp of raisins
- 10-12 deseeded black dates
- 20 pieces of cashew
- 20 pieces of almonds
- 20 pieces of pistachios
- few charoli nuts
- 1 cup or 125 gms of sevaiya
- 2 litre of 8 cups of organic cow milk
- 1 cup or 120 gms of sugar
- powder of 8 cardamom pods
- rose petals
Method:

- Add cardamom powder and stir properly.
- Garnish it with dry fruits and rose petals.
- Sheer Kurma is ready to be served.

Ingredients:
Balai wala doodh (Full fat milk) : 2 litres
Shakar (Sugar): 120 grams (nearly 1 teacup)
Seviyan (Vermicelli ) : 35 grams or 3/4th teacup
Asli ghee (Clarified butter): 3 ½ tablespoons
Kaju (Cashews): 20 grams or handful
Badaam (Almonds): 20 grams or handful
Pista (Pistachios): 15 grams or handful
Sukhe khajoor (Dry dates): 5 whole
Chironji (Charoli) : 15 grams or handful
Procedure:
1. Kaju, badam, piste, khajoor aur chironji ko separate cups mein raat bhar bheegne ke liye rakh dijiye. (Aap yeh saare mewe ek ek mutthi bhi le sakte hain).
2. Agli subah kaju ko bareek kaat lijiye, badam aur piston ke chhilke alag karke inhe bhi kaat lijiye, khajoor ke beej nikal kar aadhe kaat lijiye aur chirounji saaf kar lijiye. Yeh sab mewe ek jagah kar lijiye.
3. Doodh ko ubaal aane dijiye aur hilate rahiye. Chalees minute (40 min) tak darmiyani aanch par pakaiyye key yeh doodh sava litre (1.25 litre) ho jaye.
4. Doosre saucepan mein teen tablespoon asli ghee daliye aur kate hue qushk mewon ko badaami rang ke hone tak tal lijiye aur nikal lijiye aur inhe sajane ke liye rakh lijiye. Bache hue mewe aap agle istemaal ke liye refrigerator mein rakh sakte hai.
5. Bache hue ghee mein aadha tablespoon aur ghee daliye. Seviyan crush karke daliye. Badami rang ke hone tak inhe tal lijiye.
6. Uble hue doodh ko fauri is mein daliye. Paanch minute (5 min) tak pakaiyye ke sewiyan gal jaayein.
7. Is mein shakar (sugar) daliye. Das minute (10 min) tak pakaiyye ke shakar is mein achhi tarah se ghul jaaye aur iski kachhi bu ya raw smell door ho jaaye. Aanch band kar dijiye.
8. Bowl mein nikalkar tale hue sukhe mewon aur zafraan ke kadiyon se sajaiyye.
