Maximise all parts of a beetroot - including its nutritious foliage - through this easy-to-make beet berry smoothie. If you are using a NutriBullet, it can handle the beetroot cut chunky, but if you're using a less powerful machine, consider grating first to make it easier on your blades.
Ingredients
1 cup beetroot leaves, stalks removed
½ medium beetroot, peeled and chopped
1 cup frozen berries
1 cup coconut water
2 tbsp ground linseed sunflower and almond (LSA)
¼ cup mint leaves
¼ cup goji berries
Method
Place all ingredients into a NutriBullet or the extractor blender of your choice.
Blend for 45 seconds until smooth.
Serve.
