- 600g firm tofu, cut crossways into 2cm-thick slices
- 1/3 cup (80ml) teriyaki marinade
- 1 tablespoon honey
- 1 tablespoon rice wine vinegar
- 1 teaspoon ginger, finely grated
- 1 tablespoon sesame oil
- 440g pkt wok-ready udon noodles
- 2 small carrots, cut into matchsticks
- 2 small Lebanese cucumbers, finely chopped
- 3 spring onions, thinly sliced
- 1 nori sheet, finely shredded

- 100g snow peas, trimmed, halved
- 1 small red capsicum, seeded, chopped
- 450g pkt microwavable white rice
- 1/2 cup (60g) frozen peas
- 1 cup (120g) shredded red cabbage
- 420g can corn kernels, rinsed, drained
- 1/4 cup (60ml) lime juice

- 1 teaspoon lemon rind, finely grated
- 1/4 cup (60ml) lemon juice
- 2/3 cup (50g) parmesan, grated

- 1 garlic clove, crushed
- 1 tablespoon ginger, finely grated
- 1 tablespoon lemongrass paste

- 100g rice vermicelli noodles
- 1 carrot, cut into matchsticks
- 1 Lebanese cucumber, seeded, thinly sliced
- 100g snow peas, trimmed, thinly sliced lengthways
- 1/2 cup coriander leaves
- 2 tablespoons sweet chilli sauce
- 1 tablespoon fish sauce
- 1 tablespoon lime juice

Cheesy burger with tomato chilli relish
Any remaining relish will last up to 1 week in an airtight container in the fridge. Use it to jazz up Bolognese, spread it on sandwiches, or serve with cheese and sliced deli meats as part of an entertaining platter.

- 1 birdseye chilli, halved, seeded, finely chopped
- 500g tomatoes, chopped
- 2 tablespoons brown sugar
- 2 tablespoons apple cider vinegar
