Buckle up Penrith, you've scored some young guns. Chefs Richard Borg (ex-Momofuku Seiobo) and Josh DeLuca (ex-Quay) are following the lead of Sydney's senior tier of fine dining chefs – Neil Perry and Warren Turnbull included –  and branching into burger territory.

Timothy Rosenstrauss, who met Borg and DeLuca working at recently-closed Asian restaurant Master, confirmed the trio plan to open Burger Head before Christmas on Henry Street, in Penrith.

"Richard and Josh are from the west and want to bring the sort of thing you'd find in the inner city.  If it works we'd look at opening in Liverpool, Parramatta, Blacktown and the north-west," Rosenstrauss says.

Besides burgers, Burger Head will serve a revolving list of specials showing off a few modest tricks using the owners culinary training. 

When Burger Head secures a liquor licence in coming months, the trio (all aged between 22 and 24) want to bring a  "small bar vibe" to the venue with locally sourced craft beers and cocktails.

It isn't the only opening action in Penrith.

On High Street another start-up, Big Poppa's Burger Bar, is also under construction. Lewis Jaffrey from Darlinghurst's hit venue, Big Poppa's, isn't amused. "It's pretty cheeky. We're talking with trademark lawyers about it at the moment. It has suddenly become a popular name," Jaffrey says.
