ingredients
- 2 1/2 cup desiccated coconut
- 1/4 cup coconut oil
- 1/3 cup raw honey
- 1/2 cup raw cacao powder
- 1 tsp vanilla extract
method
- Put all the ingredients into a food processor and whiz them together well. (If you don’t have a food processor, try mixing it all by hand).
- The mixture should be wet but not soaked. If you find it too wet just add some more coconut. If it's too dry, add more oil.
- Roll tablespoons of the mixture into balls with your hands, then roll the balls in shredded coconut and place them on a cookie tray.
- Put them in the freezer for approximately 30 minutes, or until they set.

notes
- You can use pure maple syrup instead of raw honey, or you can use a mixture of both.
- For a richer flavour use more cacao powder. If you're not a fan, use less!
- You can either store these in the freezer (where they become firm, but not frozen) or in the fridge.
