Is the calamari hot dog about to replace the ubiquitous lobster roll as Sydney's must-have edible? Justin Bull, owner of the newly opened Huxton's at Bronte, certainly hopes so. Bull, who spent five years as James Packer's private chef, and worked in the same capacity for Russell Crowe before that, travelled the world as a perk of his work, shaping his personal food journey.

Barcelona's Bodega 1900 restaurant inspired the Huxton's dog, which is served on a milk bun. Bull, in tandem with head chef Daniele Trimachi, is pumping out everything from "shrimp" tacos to snapper and vegetable pie. "I wanted to focus on seafood because there isn't much of it easily available between Coogee and Bondi," Bulls says.

 On the strip where Three Blue Ducks and Iggy's Bread trade, Huxton's has some eye-catching morning fare, including fig and ricotta on toasted cherry bread.

"Hopefully we'll open for a couple of dinners a week over summer. But I want it to be somewhere you can eat in, or pop in and grab some cooked prawns or a meal to take to the beach or home. Kind of like having your own private chef," Bull says.
