With gorgeous jamon, sherry-soaked figs and rich mascarpone, you can create gourmet nibbles without the fuss.
Cheat's blinis with jamon and figs
- 16 dried dessert figs, halved
- 1/4 cup (60ml) Pedro Ximenez sherry or other sweet sherry
- 2 x 140g packets pikelet bites (see note)
- 250g mascarpone cheese
- 100g sliced jamon (see note) or prosciutto, cut into strips
- Olive oil, to drizzle
- Chervil (see note) or flat-leaf parsley sprigs, to garnish

- 200g (3/4 cup) Greek-style natural yoghurt
- 1 1/2 tablespoons mango chutney
- 1 teaspoon Patak's Lime Pickle
- 1 Lebanese cucumber, finely chopped
- 2 tablespoons chopped fresh coriander
- 1 small fresh red chilli, thinly sliced
- 20 mini pappadums
- 20 (about 350g) small cooked prawns, peeled, deveined

- 1 x 250g ctn mascarpone
- 2 tablespoons thickened cream
- 80g Danish-style blue cheese, crumbled
- 1 tablespoon chopped fresh chives
- 10 fresh dates, halved, pitted
- 45g (1/4 cup) dry-roasted hazelnuts, coarsely chopped

- 1/2 cup char siu sauce
- 1 tablespoon soy sauce
- 1 tablespoon shao hsing (Chinese cooking wine)
- 2cm piece fresh ginger, finely grated
- 1 teaspoon sesame oil
- 1.4kg chicken drumettes
- 2 green onions (green part only), to serve

- 1 sheet puff pastry, thawed
- 2 tablespoons quince paste
- 250g round of camembert
- 1 egg
- 1 tablespoon milk

- 4 thick fresh chorizo sausages
- 1 sheet frozen butter puff pastry, partially thawed
- 1 egg, lightly beaten
- 2 teaspoons milk
- 1 teaspoon sesame seeds
- Tomato relish, to serve

Create a Christmas dessert in a flash with these quick and easy fruit mince tarts.

- 60g unsalted butter, chilled, chopped
- 3 tablespoons (1/4 cup) caster sugar
- 1/2 cup (55g) ground almonds
- 1/2 cup (75g) plain flour
- 36 ready-made mini pastry tart shells
- 410g jar fruit mince
- Icing sugar, to dust
Time Plan
Time plan for party at 7.30pm
The day before:
Make the yoghurt mixture for the prawns (step 1). Cover with plastic wrap and store in the fridge.
Make the mascarpone mixture for the dates (step 1). Cover with plastic wrap and store in the fridge.
Marinate the chicken drumettes (step 1).
Make the mince tarts. Cool. Store in an airtight container at room temperature.
The morning of:
Prepare the fondue pie (step 1 & 2). Don't bake it. Cover with plastic wrap and store in the fridge.
Make the cucumber mixture for the prawns (step 2). Cover with plastic wrap and store in the fridge.
Make the shallot curls for the chicken (step 3). Store in the water in the fridge.
Midday:
Macerate the fig for the blini (step 1)
Cook the pappadum for the prawns. Store in an airtight container at room temperature (alternatively, buy pappadums chips, for an even "cheatier" trick!)
Prepare the sausage rolls (steps 1 & 2). Double or triple the recipe if desired. Place on a tray. Cover with plastic wrap and store in the fridge.
1 hour before guests arrive:
Cook the chicken (step 2)
Finish the dates (step 2). Place on a platter. Cover with plastic wrap and store at room temperature.
15 minutes before guests arrive
Assemble the blini (step 2).
Assemble the prawns (step 3).
When guests arrive:
Cook the fondue pie (Step 3)
30 minutes before serving the sausage rolls.
