Hi Everyone! Here you have a delicious and very easy recipe for this summer! Greek Style Salad, it's really simple to make, so full of flavor and beautiful colors, it makes the perfect lunch for any kind of diet, and if you serve it with your favorite lean meat, you will have a very healthy and nutritious dinner! Serves 4-6
Ingredients:
1 head Green Leaf Lettuce (or Romaine Lettuce or Iceberg lettuce will work fine too)
1 Red Bell Pepper
1 Green Bell Pepper
½ a Red Onion
1 cup Black Olives
1 cup Grape Tomatoes
½ an English Cucumber
1 cup Feta Cheese cut into small cubes (more for serving)
To make the Dressing:
3 tablespoons Extra Virgin Olive Oil
The Juice and Zest of one Lemon
2 tablespoons chopped fresh Parsley
½ tablespoon dry Oregano
¼ teaspoon minced Garlic
Salt to taste
Ground Black Pepper to taste

Here is what you'll need!
Southwestern Salad With Avocado Dressing
Serves 5-6
INGREDIENTS
Dressing
1 avocado, halved
1 clove garlic
½ teaspoon salt
½ teaspoon pepper
¼ cup olive oil
1 tablespoon cilantro
1 lime, juiced
Salad
1 head of lettuce, chopped
1 cup bell peppers, chopped
¼ cup cilantro
15 ounces (1 can) black beans
½ cup red onion, chopped
15 ounces (1 can) corn
¼ cup scallions
¾ cup tomatoes, chopped
PREPARATION
Add all dressing ingredients to a blender, blend until smooth.
In a large bowl add lettuce, peppers, cilantro, beans, onion, corn, green onion, and tomatoes.
Top with prepared dressing; toss to coat.
Enjoy!

REMEMBER, these salad dressings i made are more then one serving, so you wouldn't eat it all at once. So the amount of olive oil and salt in the first one isn't just one intake. It could last you at least three days :)

Ingredients:
1 head Green Leaf Lettuce (or Romaine Lettuce or Iceberg lettuce will work fine too)
1 Red Bell Pepper
1 Green Bell Pepper
½ a Red Onion
1 cup Black Olives
1 cup Grape Tomatoes
½ an English Cucumber
1 cup Feta Cheese cut into small cubes (more for serving)
To make the Dressing:
3 tablespoons Extra Virgin Olive Oil
The Juice and Zest of one Lemon
2 tablespoons chopped fresh Parsley
