Lamb with cheesy oat dumplings
  • Ingredients
  • 8 lamb chump chops
  • 2 tbs plain flour
  • 2 tbs olive oil
  • 1 1/2cups (375ml) beef stock
  • 500g new potatoes, halved
  • 2 carrots, chopped
  • 2 sticks celery, chopped
  • 6 small onions, peeled
  • 2 parsnips, chopped
  • 400g can diced tomatoes

Cheesy oat dumplings

  • 2 cups self-raising flour
  • Salt & freshly ground pepper
  • 60g butter, cubed
  • 2/3 cup (60g) rolled oats
  • 1/2 cup (60g) grated cheese
  • 3/4 cup (180ml) milk

    Was a lovely dinner on a cold night. Hubby loved it. I did make some changes though. I didn't have beef stock so I used vegetable stock instead. I also added rosemary to the dish. For the dumplings I added dried Italian mixed herbs to give it an extra depth of flavour. A great dish that can be mostly made beforehand and popped in the oven when you get home from work.

    Tasted quite nice but not sure I'd use chops next time as finding bits of bone was off putting. Added lemon thyme and marjoram and a bay leaf for extra flavour. I did like the dumplings but were a bit heavy for this rich dish.

    Really tasty dish. Did not include celery and parsnip but substitued with slices of fennel and lemon to compliment the lamb and also added more stock. I cooked it in the slow cooker which just made it melt in your mouth. Family loved the dish especially the lamb, dumplings and sauce.

    This went down a treat with my family - the dumplings were great and nobody could tell that the rolled oats were in them.

    This was nice but needed to cook a little longer than the 1 hour. The dumplings are yum. Will use them on other casseroles.
