Ingredients

  • 2 cup fruit mince *See notes
  • 250 g butter
  • 1 cup brown sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 2 1/2 cup plain flour
  • 2 cup rolled oats

Method

  • STEP 1 Preheat oven to 160C. Line a slice pan (18cmx28cm) with baking paper.
  • STEP 2 Beat butter and sugar with an electric mixer until pale and creamy. Add in the vanilla and egg. Stir in flour and rolled oats until combined.
  • STEP 3 Place half the mixture into the tin and press down firmly. Top with the fruit mince and crumble the remaining mixture over the top, pressing down gently. Bake for 35minutes.
