How to make ghostly cupcakes
Use this quick 'trick' to 'treat' your guests to a ghostly Halloween cupcake.
Just bake and decorate
For 24 cupcakes: Make 2 x 410g pkts White Wings Vanilla Cupcakes using 4 Coles Brand Australian Free Range Eggs, 320ml milk and 120g softened butter or spread following packet directions, without icing.
For the buttercream icing: Use an electric mixer to beat 375g softened butter in a bowl until very pale. Gradually add 4 1/2 cups (720g) icing sugar mixture, beating well between each addition. Add 1/4 cup (60ml) milk and beat until well combined.
Spread buttercream icing evenly over cupcakes. Insert a lollipop into each cupcake. Roll out 25g portions of Coles Brand Ready-to-Roll White Icing on a surface dusted with icing sugar into 12cm-wide, 2mm-thick discs. Carefully drape over lollipops, allowing edges to hang. Use chocolate writing icing to draw eyes and a mouth on each ghost.
