IT has been two years in the making but now the Greek epic that is 1821 restaurant is to finally open.

The Martin Place venture of restaurateur Jim Kospetas, with chef David Tsirekas, will throw open the doors on Monday.

Kospetas says the wait has been worth it. “It has been a challenge,” he says. “But we are very relieved it is opening.

“The menu looks amazing — David is sending out some amazing dishes.”

Tsirekas says his opening menu will include classics from his two previous restaurants, Perama and Xanthi, including his much-loved pork belly baklava and lamb skaras.

“They are classic dishes but I am taking the rustic out of them,” Tsirekas says.
