Thyme (/ˈtaɪm/) is an evergreen herb with culinary, medicinal, and ornamental uses. The most common variety is Thymus vulgaris. Thyme is of the genus Thymus of the mint family (Lamiaceae), and a relative of the oregano genus Origanum.
Ancient Egyptians used thyme for embalming. The ancient Greeks used it in their baths and burnt it as incense in their temples, believing it was a source of courage. The spread of thyme throughout Europe was thought to be due to the Romans, as they used it to purify their rooms and to "give an aromatic flavour to cheese and liqueurs". In the European Middle Ages, the herb was placed beneath pillows to aid sleep and ward off nightmares. In this period, women also often gave knights and warriors gifts that included thyme leaves, as it was believed to bring courage to the bearer. Thyme was also used as incense and placed on coffins during funerals, as it was supposed to assure passage into the next life.
The name of the genus of fish Thymallus, first given to the grayling (T. thymallus described in the 1758 edition of Systema Naturae by Swedish zoologist Carl Linnaeus) originates from the faint smell of the herb thyme, which emanates from the flesh.

Plot: The Thicket is a wonderful place of magical enchantment. All that a person needs is provided to them by the forest, there's no need to labor, and the main focus of daily life is to spend time with friends and explore the Thicket. But lately things in the Thicket have been getting a little twisted. Forest folk have been disappearing at random with no explanation. As the wood slowly empties, the spirit of contentment gets replaced by feelings of abandonment and sorrow. Thyme, a headstrong forest girl, is at a loss for what to do when her dearest friend, the Woods Man, disappears without a trace, joining the ranks of the newly missing. The thought that he would never have left the Thicket of his own accord does nothing to reassure her. Then Thyme herself is ambushed one night and knocked unconscious. She awakes to find herself in an unusual place, far from the life she is accustomed to in the Thicket. She'll have to keep all of her wits about her as she tries to escape the clutches of her inhuman captors, encounters strange weaponry, and accidentally discovers the secret behind the disappearances of her forest folk friends. When all is said and done, one thing is made abundantly clear to her. Human beings never should have left the Thicket.

In the next room, an imaginative pubescent Gussie holes up with her 'Uncle Rex.' When Gussie witnesses Thyme burying a bloody bag in the woods one night, her imagination is set ablaze. Did Thyme murder her newborn baby? Leaving Gussie is a universal story about human spirit and one woman's attempt to overcome the perils of postpartum depression. Ironically it is the affection of a broken child that leads Thyme to face her demons and ultimately recover her maternal instincts.

Chances are, if you've worked with fresh thyme, you've become frustrated with fresh thyme. And that's a shame—the flavor is so deliciously savory that it's one of our favorite herbs in the Test Kitchen, if not THE favorite. You've no doubt been told to strip the leaves off the stems by pulling against the direction of growth, but that doesn't always work so well. No worries—we'll show you how to handle any thyme situation with ease in our video blog.
