Pineapple
This sweet fruit is native to South America. It contains an enzyme that breaks down protein, which tenderises meat and stops gelatine from setting.

High in vitamin C, pineapple also contains fibre and potassium.
Buying and storing
Select plump-looking fruit with a sweet aroma. Once cut, cover with plastic wrap and store in the fridge for up to three days.
Preparation
Remove the base and top. Stand upright and cut down the length to remove the skin. To remove eyes, cut 1cm-deep wedges diagonally around the flesh.
Cooking tips:
- Coarsely chop and add to fruit salads.
- Thread onto skewers and barbecue.
